Hi! Chef Rose the tortas you baked looks good yummy. It’s a good idea that baking powder was added last in mixing the ingredients in order not to have lots of holes. This is my first time to learn this so I have to try it. Noon pag nagbbake ako nakakalimutan ko ang baking powder na isama sa mga dry ingredients but still I add it in mixing at the end. I said to myself, oh! Bahala na basta May baking powder na inilagay ko. After baking my recipe it turned so good. For the liner parchment paper can be used, how about if I will spray the molders with non stick spray can I use it? Thank you for sharing. 😋❤️🙏
Yes. Adding the baking powder last is the secret. You can spray the molders with oil but it is so much easier to wash and clean up the molds if you put parchment paper.

I am sorry but I do not have access to tuba. To make one, you have to be near the source because tuba used as a leavening agent has a limited usage time.
Yes you can skip the anise seeds. I used torta baking cups which you can make by cutting parchment paper if you can't buy the liners where you are located. Thank you for watching!
Chef, i would like to ask why did my Torta' s look like volcano, ha! Ha! Is there a way that it does not go out of proportion? Thanks, i already made it twice. It is so good.
I only have 2 explanations for your question: 1). Please check your measurements of the ingredients if you do not have too much flour or too little liquid. 2) Oven temperature is too high. Reduce your heat by about 25 degrees. Buy an oven thermometer to make sure that you have the right temperature. Some people actually like their torta to have the volcano look and this is achieved by using a higher oven temperature.
To be honest, I do not know the science behind it BUT I found out from making it many times that if you add the baking powder at the beginning of the mixing process, your torta has big large holes. If you add it at the end, the torta has fine crumbs. Thank you for watching!

I honestly do not know the science behind that but from experience making this torta, I found out that for this particular recipe, by adding the baking powder last, the cake has smaller air holes compared to adding the baking powder with the flour at the beginning of the mixing stage which produces large air holes. This however is not true for other recipes. Thank you for watching!
No ma'am because this recipe was not made for self rising flour. Self rising flour already has a definite amount of baking powder and salt. For this recipe, the baking powder in the self rising flour is not enough.
Hi Chef Rose, I am having a hard time finding that molding pan for torta. I am here in Toronto. Do you have any idea? I checked with Amazon, was able to buy but it was big like for Torta po talaga
I am not familiar where you can buy them in your area. I know that they have similar pans there in Canada and the US and they are call tart molders but choose the bigger ones. They are not exactly the same but they will do. Otherwise, you can just bake your torta in a muffin pan.
I have never used ground anise but I see no reason why you can’t. Give it a try. Just don’t put too much because ground spices give out more intense flavors than whole ones. Thank you for watching!

Yes I purchased my oven here in Cebu City. It is a La Germania Electric Wall Oven European Edition (Italian). It is a convection oven but I rarely use the convection setting. A convection over is nice to have. Buy one if your budget allows it. Thank you for watching!
Are you sure you used 4" torta molds? I used 4" to make 27 pcs. 4" molds are just slightly bigger than a cupcake mold. You make 17 pcs only it you used 5" or 5.5" molds. Kindly check.

No you can’t. Your torta will not come out right. Baking is a science. It has to have the correct proportion of ingredients.

No ma'am because the Torta Cebuano is made with egg yolks. If you add egg whites, the flavor and texture would not be Torta Cebuana.

Dry ingredients mixed together and wet ingredients goes together but your way is tested and better. Great recipes, more power.

Anise is optional. Some recipes have anise specially the older ones. The more modern ones no longer has anise.
