  • In this video tutorial, I am showing you how to make a basic rice cake - bibingka using 3 different methods - traditional, steaming and oven-baked. Whichever method you use, you will still get that delicious bibingka flavor.
    I believe that the real secret to making a successful bibingka is the variety of the rice used.
    I have some tips below to make sure that you will be successful in your attempt to make bibingka.
    Chef's Notes:
    1. Choose your rice. Buy the cheap "buhaghag" rice variety. Do not use the sticky variety because this will not produce a good bibingka.
    2. Soak the rice bewteen 4 - 12 hours. What is important is that you try to break the rice, if you can easily break it, then it is ready or soft enough for grinding.
    3. If you are using a blender, grind a small amount of rice and water/coconut milk at a time so as not to overheat your blender. The finer you blend your rise, the finer the texture of your bibingka.
    4. Sometimes, you need to adjust the water/coconut milk in the recipe. Some rice variety absorb more water so you need to add less when you make the mixture. Experience will be your guide in this step.
    5. Cooking time will vary depending on the size of the bibingka and the method of cooking used.
    6. You can top your bibingka with buko, cheese or salted eggs.

    I made them and they were sooooooo good I couldn’t stop eating! I reduced the sweetness a little bit. Thank you Chef Rose for sharing the recipe. I really missed bingkang bisaya the provincial way with tuba for fermentation. But this recipe came very close to that. I’m beyond thankful!

    takes me back to my childhood days..
    Our lola used to 'tabo' every Sunday in Carcar market and dili jud mawala ang budbod & puto with tapul, and bingka..
    My favorite is the steamed one.. especially katong violet og white topped with pink food coloring.. hehe pareha ra og lami pero as bata murag mas mu lami jud basta nindot ang color😆
    Now I'm 29, and ginapangita gihapon nako ang budbod og bingka if mauli ko sa Pinas😊

      hello Po..em from Cebu but now lumipat na sa NCR..try nyo po bibingka ng mandaue city, kagit saan po dun..masarap at hndi Kyo mapahiya..pwede nyo e freezer then reheat in oven when I you crave for it..

      We have our own "kakanin" here in Cebu yun lang di mo alam kung saan bibili nun.. These bibinkas, puto maya, masi, pintos are just a few of them 😂

    I miss this delicacy so badly. 😢 My ears and eyes peeled are on the screen now . Never paid attention in my youth because these were readily available. But not here in the Texas border. I'm grateful to you that I can recapture the taste .
    I wonder if I should use the torch to brown the top.

      Yes. Regular rice. Buy the cheapest rice because it is less sticky. The more expensive rice will not make a good bibingka.

    You mentioned 400 degree for 20 minutes. That high temperature the bibingka will not burn?

      Yes you can. You just need to adjust the water. I have a recipe in my youtube channel that uses rice flour. In my personal opinion, freshly ground rice tastes better than rice flour. I think it has something to do with the processing.

    Chef ask lng po I use blender Pero my iwan na small grain ng rice at ng luto Nafeel mo parin grain rice , Anu po better na gawin ?

      Ok na yan kung very small grains na. For next time, easier to blend if you add only half of the liquid first.

    What's the temp if I will use the oven and how long to bake?

      375F for about 30 - 35 minutes (depends on the oven and the size of your bibingka) and then turn on the broiler setting of your oven and bake until the top browns.

      Yeast does not need warm water because it is already warm here in the Philippines. You need lukewarm water if you live in a cold country.

      1 kilo of raw rice is about 5 - 5 1/2 cups depending on the variety of rice. It is best to weigh it. The recipe needs 1/2 kilo so it is about 2 1/2 - 2 3/4 cups. Thank you for watching!

      Yes. Over fermentation will make the dough sour.
