Papa G, I have made this twice (in a little over a week..lol) and I have learned a few things. First, the pie is sinfully good. It is all I can do to keep my hubby from snatching it and attacking it with a fork and claiming it as his own. I did learn that bleached almond flour works better than unbleached. Unbleached is ok, it just gets much much darker. And... I used glucomannan powder instead of xantham gum. It incorporated better with no lumps or change in texture. I also used extra large eggs simply because that is the size I buy. This recipe has become a family favorite! Thank you. Your site has become my go to for recipes.

You might be referring to "blanched" and "unblanched" almond flour. I've never heard of bleached almond flour, just bleached all-purpose flour. The blanched almond flour uses blanched almonds (skins removed), and the unblanched almond flour uses unblanched (skins on) almonds, hence the lighter and darker outcomes of such. This recipe looks divine!
Made this and it turned out absoultely phenomenal, especially the pie crust. So good in fact I'm using the crust in another recipe completely different than a pie. Outstanding job Papa G!
I tried so many pecan pies recipes from other youtubers and all of them didn't go well, and believe me I do them 100% as they say in the video/recipe, and nothing but disappointments and just through in the garbage, but I have a good feeling about that one, it is straight forward and totally doable so I'll update you once I do it. I noticed that you use fiber yum, which has tapioca starch as an ingredient. While the link to that you included to the fiber yum product shows the nutrition label stating that it has 0 net carbs (5 carbs - 5 fiber), are you sure that it won't spike blood sugar? I have seen products advertised as having zero net carbs, but for some reason still spike blood sugar. Has anyone watching this video tested their blood sugar after eating this pie?
I don’t have fiber syrup at the moment ,and I really wanna give it a try today , so I’m thinking of mixing keto maple syrup with a table spoon of tapioca flour. I hope it’ll work .
except fibre yum spikes blood sugar three times higher than real sugar! It is a scam product. I am a diabetic, any company that advertises that as low carb should be sued. There are also many"low carb" protein bars out there that use this ISO -- it is a total scam. Your blood sugar/insulin will be LESS by two times if you made regular pecan pie!
I made 2 pies for both family dinners last week for Christmas! It was the biggest hit! I laughed because of all the desserts at one of the dinners, my SUGAR FREE pecan pie was the ONLY dessert that had one slice left! I bet most of the people who ate it had no idea it was sugar free and low carb!! This was also my husband's favorite! Now, to try your coconut cream pie!!!

@@Montai The deal with fiber syrups are that they spike insulin in a lot of people. Most products that use them do it so they can claim low carb. Some sugar free syrups use other things to sweeten and they should be okay, at least in the sense that they won't spike insulin. No telling what they will do to your body over time :)
Papa G have you tested your blood after using the Fiber yum or Vita Fiber?? I'm seeing a lot of folks who say it spiked their blood sugar worse that straight sugar. One test I saw where they consumed just the Vita fiber (1 Tbls) and waited 20 min had their blood sugar go from 84 to 105 in that time period. Mind you as good as this recipe is I may have to take the hit lol. I will be testing my Blood sugar today using the same method of consuming 1 Tbls waiting 20 min and retesting to see the effect.

Yes, dates are nutritious but the sugar content outweighs the nutritional value. They're a no on keto. I used to love filling them with walnuts as a snack and can't do that anymore since starting keto 2 years ago.
Could chia seeds be used instead of fiber yum? I can't get it in time. I thought they might be gelatinous enough and for flavor I could do vanilla or maple extract. Your thoughts?

I hope to as well Jefrey. The only problem I have with using coconut flour is that it usually requires 3x the moisture as almond flour...and then I run into density vs dryness issues. It can be overcome, though. I think I've been a little lazy as well. I need to pick up my game. I already have a few recipes scheduled, so it may be farther down the road, but I will definitely try to use coconut flour in future recipes! If you don't mind me asking... Where is it that you are from?

The pie looks like it is very tasty, but, I'm having a hard time with your 3.25g per serving carb count. The nutritional info gathered from Google shows the amount of almond flour and pecans in the recipe alone calculates to 6.75g per serving. Then of course there is the tasty filling to figure in.
I find the internet numbers can vary. If you look at the individual labels of the products used versus the general carb count of a product, the amounts can vary quite a bit. That's why I encourage everyone to read their labels. For example, canned crushed tomatoes are so different from brand to brand. Also, be sure to subtract fiber and sugar alcohol from the total carb count.

Great question! It should freeze just fine (use a freezer bag or tupperware) and warm in the microwave. If you use a standard oven to reheat, just take caution that the crust doesn't burn!
Brett Owen hi Brett. If you want it to hold together, I highly suggest the xanthan gum. It's actually used in a lot of the items you may have purchased over the counter such as yogurts and salad dressings.

I like the video approach. I watch each segment as I prepare along with the video. With my video small I can see and prepare the ingredients at the same time. Great job and thank you for recipes that rarely call for specialized ingredients. I have most everything I need in my spice cupboard.

yes it did spike my blood sugar a bit but not dramatically I guess everyone responds differently.
I will try this with psyllium. It is practically carb free and will have the same thickening effect as constarch without the carbs!

Here’s a tip to avoid spills. Put the pie pan on a baking sheet near the stove before filling it.
Have read that Fiberyum has a significant effect on blood sugar, especially for diabetics. Do you know if this is true? Thanks

Give it a try. Taste the syrup though. If it's really sweet you may want to lessen the amount of sweetener. FiberYum is not overly sweet.

If you mean the tapioca syrup, some have substituted a sugar free maple syrup. Not sure what the results were.

Be very careful with that isomalt sweetener. Anything over 30g of it acts as a laxative!

I like the video approach. I watch each segment as I prepare along with the video. With my video small I can see and prepare the ingredients at the same time. Great job and thank you for recipes that rarely call for specialized ingredients. I have most everything I need in my spice cupboard.
I like that Papa G actually includes the ingredient's and macros in the drop down box ! most others you have to go to a web page or blog post to even get the ingredient's list. Great Job Papa G keep doing what you do I also like that I get to see the how to rather than just reading about it.
