I love this salad!! We make at Christmas eve in the Czech Republic and in Poland they call this type of salad a Russian salad. You just put in pickled cucumbers rather than fresh. 😍

Yes I agree!! My mom never used onion in hers, and I grew up eating one with out onion. I tried adding sliced (and chilled) onion with my family and they rejected. 😂 It's refreshing crisp texture tho!!!

This is a taste of my childhood. I've recently made a slight variation on your recipe. I like both for their lighter texture then western version with their high proportion of vegetables to potatoes.
Japanese mayonnaise has a thicker, creamier texture, and a more savory flavor. It uses egg yolks as compared to whole eggs. Additionally, Japanese mayonnaise is typically made with rice vinegar or apple cider vinegar, instead of distilled vinegar.
Seems yummy. But i have a question, if we squeeze the carrots and cucumber in salt and rinse with water and squeeze, isn't it the nutrients will be wasted?
The reason we salt is to withdraw moisture out. For the potato salad, if you don't do that, moisture will slowly release inside the potato salad and it will go bad. So it's very important step. It's not always 100% for nutrients, but it's used for texture, color, and some nutrients for sure.

We use pickled vegetables (carrots, celery, parsley, peas, corn, capers, onions ... and especially pickles). Who likes, even a small hot pepper. We also add Dijon mustard to the mayonnaise. :-)
