That's what my Newfie granny had done. She used Granny Smith & kept the skin on with yellow onion. Mustard & mayo mixed together 😊 & kept her potatoes in chunks.

Very similar to what my mum used to make when i was a child. We went on these "Scampgnata" days with the local Italian church in sw London. She used to make roast chicken that is eaten cold, i still remember picking the parts that had the most jellified fat on it 😊 and a loaded potato salad that was similar to yours. Instead of cucumber, she used a few jars of insalata giardiniera. Yum.

Japanese and Korean potato salads are probably my fav potato salads. I didn’t think anyone could improve on American potato salad that has so many varieties depending on the region. But this looks like the ones I’ve had in little Tokyo and Korea town in LA. I’m going to try this recipe. Thanks for the inspiration

I am one who has to leave the potato skins on. An excellent source of potassium. Also, depending on how you spice it, it always tastes better after a day or three sitting in the fridge, if you can wait that long...

It's almost the same as russian "Olivie" salad but we use canned green peas instead of corn. And we didn't mash potato but cut it in cubes. It's traditional new year (christmas holiday) salad in Russia and other post sovet union countries.

Also my absolute favourite banchan is water chest nut jelly - I came to know this side when we had a Korean bbq shop open up not far from my old family home. The owner would make this herself and I would have numerous dishes of this while dining there. 5 years ago she closed her shop and I have not found this dish at any korean restaurant since. Do you know this banchan?

What makes this Japanese in particular? It's just normal potato salad. It's like the Russian.pitato salad they have in Spain.Just curious, why you boil the potatoes, carrot and egg separateky? If you making hard boiled eggs, you can boil the carrots, potatoes,egg in the same pot at the same time. It cuts down on time and dishes.

If you've got an immersion blender, it's very easy to make it yourself, and it won't be in that squeezy bottle that is impossible to fully empty
