    Teochew kueh is a famous peach shaped, pink coloured kueh usually filled with glutinous rice or yam, dried shrimps, mushrooms and peanuts. With the auspicious meaning of longevity, Justine will be combining all the ingredients to make it a texture filled and aromatic yummy snack. Teochew kueh can be steamed or pan-fried. The dough is easy to work with as it is soft, chewy and can be mended easily. Teochew kueh is not hard to make so go on and try it!

    材料 ingredients
    馅料Fillings
    ---
    1. 200g蒸或煮熟的糯米 (水和米比例一样)200g steamed or cooked glutinous rice (same water to rice ratio)
    2. 400g 芋头切条状 400g yam (julienned)
    3. 2-3粒香菇切丁 2-3 Mushroom (diced)
    4. 50g虾米 50g dried shrimps
    5. 1 根香菜 1 stalk of coriander
    6. 50g 甜菜脯50g sweetened preserved radish
    7. 150g 炸香花生 150g fried groundnuts (smashed and cut coarsely)
    8. 5-6汤匙葱油 5-6 tbsp shallot oil
    9. 1-2 茶匙盐 1-2 tsp Salt
    10. 1茶匙糖 1 tsp sugar
    11. 酱油适量Soy sauce
    12. 胡椒粉适量Pepper
    13. 少许鸡精 a little chicken essence seasoning
    * 注:视频里方太用的面粉份量是可以做15块的潮州糕,可是她准备的馅料还可以包多7-8块潮州糕(如果要包完馅料就要加多一半份量的面粉)
    In the video, Justine’s flour portion is enough to make 15 pieces of kueh. However, she has extra fillings to make another 7-8 pieces of kueh. So to use up all the fillings, we need to add additional half of the original flour portion
    面团 rice dough (15+7 块/pieces)
    ------
    粘米粉 250g + 125g rice flour
    木薯粉 100g + 50g tapioca flour
    滚烫的热水 630ml + 300ml hot water
    食油 3 tbsp + 1.5 tbsp cooking oil
    盐 1 tsp + 1/2 tsp salt
    几滴红色素 few drops of red colouring
    *中火蒸5分钟后,开锅一下,再盖锅蒸7分钟
    Steam for 5 mins with medium heat then open the lid, close the lid again and continue to steam for another 7mins
