CORK, Ireland here. There was a huge gun powder mill near Cork, in Ballicollig under the British Empire. So this is where Salt Peter was first used to preserve bacon for the new Americas ships stocking up. The sailors love its redness when other salted bacon turned grey. This Secret formula was a huge success that led to a great amount of ships stocking up before going to Americas. So much so that 400 "fully laden ships" were inside the harbour when Napeoleon layed siege. Enormous expense was paid in construction to free the harbour for trade to resume. Joss.

Nice recipes I also make my own bacon and I find it really nice if you take off the rind first let it air dry for a couple of days then rub in brandy or rum a smoke it for about 6 hours it is absolutely delicious

I cure and smoke my own bacon every couple months. I give it awayas presents. I send it through the mail, works perfectly. The demand is huge, so I make 100 lbs at a time. Im always looking to try new recipes and I will try this one. I cure the pork for about 10 days. Wash and dry it thoroughly, hang the pork for about 10-12 hrs then smoke it until the temp gets to 155f. Vacuum seal and its done. I live in St Marys, Ohio.
Baltimore, Maryland. This is a VASTLY different take on bacon as I know it, but my interest is peaked. Am going to try this with pork bellys I can get here - spice them, smoke them and see what results I get. Thank you for the video!

Been making bacon for years. I mix curing salt with brown sugar and after its cured I smoke it at 200-215F until internal 145....nice video...regards.
