@Bennett Chan Salmon really vary in size. You could get two fillets out of a salmon 3 pounds per fillet easily... That's 6 pounds of salmon giving you 10 decent size portions. You could get a whole lot more as well. If each fillet was 4 pounds for example you'd have enough salmon for 16 people. (8 pounds of skin on fish) 16 half pound portions.

If you folks are looking for production feedback can I suggest that you keep the name of the method on-screen while Amiel is prepping it? It shows up and is spoken so quickly that if I don’t pay attention for that exact moment sometimes I miss it. Obviously things like ice cream are obvious throughout, but I know I’m mostly interested in the usable methods and would love to be able to references the name of the method while it’s being cooked. Other than that, I love this series and hope you keep making it. Amiel’s voice feels like a warm blanket of salmon to my ears.

Great video! Additional suggestion: Place small sheet pan in cold oven and set on highest temp. Season salmon. When oven gets to temp, remove pan, place salmon skin side down return to oven. Turn temp down to 250 and cook for 12-15 minutes. It turns out perfect every time.
Not to forget the Coffee maker salmon & Hairdryer salmon. 🤦♂️ I was actually surprised he didn't use the Iron. Or al-foiled his salmon, chucked it in the engine of his car and drove to Nebraska for dinner ! 🤦♂️
Your buried salmon is actually a form of cooking called 'hangi' in Maori culture, I've had the luck to try it. Often kumara/sweet potato and different types of meat are used and its delicious!
Don't forget the "I'll take each one out when they are done" then he takes out the leaf covered salmon first and says that it's raw in the middle. He is also surprised that grass burned in a fire pit.

For the banana leafs the cooking times are crazy long. We do this in some regions of my country, and it is usually a couple hours process, so the smokey and vegetable flavors have time to get into the meat, as well as cooking it beyond rare. Also, in general, that method, same as the buried one, require to add aromatics and so for it to actually make a difference.

One of the biggest problems I have with this series is that they kinda already know what is the "good" methods and the "bad" methods. You can tell by how much effort goes into the good methods and how little they care about the bad methods. The fact that the grilled salmon was just straight up burnt and they didn't bother fixing seems pretty disingenuous.

I was absolutely livid when I got to the end of the video and realized they didn't do it. They did cured salmon, which is part of the process for making cold smoked salmon, without actually doing cold smoked salmon.

My friends mom does the skewer grilled salmon a lot, but she first makes a mixture of this(the measurements aren’t definite, you can do as much as you want):
1/4 cup brown sugar
1 tablespoon salt
1 tablespoon pepper
1 tablespoon oregano
1 tablespoon basil
2 tablespoons olive oil
And you can add a tablespoon of onion, garlic, celery, or whatever powder you want.
She packs the skewers into the mixture (in tinfoil) and then cooks it for *i forgot how long*

Whenever he says this we all know it's not going to be great.
One of the biggest problems I have with this series is that they kinda already know what is the "good" methods and the "bad" methods. You can tell by how much effort goes into the good methods and how little they care about the bad methods. The fact that the grilled salmon was just straight up burnt and they didn't bother fixing seems pretty disingenuous.

@@tiffanyzhu9587 yeah, but even then, depending if the burnt crust is thick or not, you can peel it off and the inside tends to be good for most foods...havent tried specifically with fish though. They tend to be expensive where I am- decent tasting ones anyways. But pizza has worked out the best so far-
