This looks delicious, we make something very similar as well with the tamarind packet. Yes pork ribs are the way to go, it you’d have to try it with bones in fish, it’s delicious and absorbs a lot of the sourness.

Siningag is a Filipino sour soup 😋 Traditionally tamarind based, but I've seen other variations around the Philippines. My mom's used fresh guavas instead of the usual tamarind 😋 I've never had Sinigang with pork belly. But I'm sure it's delicious!
@@PcfulSolyou can do it with different meats and fish. You can do it with shrimp, red snapper, any fish, beef and chicken is applicable too. I usually thicken the soup with taro or miso, especially when I make it with fish. It adds another layer of flavor and it makes the soup richer.
My mom also taught me to sauté my meats in aromatics first (with a lil bit of fish sauce in there too) and tomatoes before fully cooking them in the soup. Another fun addition is taro we mash the taro into the soup to thicken it a little bit. My sister and my man loves the soup a lil thick ❤ that sinigang looks bomb tho

When I growing up my Mom do tamarind for pork and guava when she use beef and both are so good. But the veg. that you use in your sinigang is for nilaga. And we don’t fry the pork first we boil the meat until tenter, and you add the rest of the ingredients the hard to cook first and the easy to cook the last. But it’s your version and you’re the one eating it .

u can try salmon for fish, or if u eat shrimps, that's good too. tip just put your sinigang mix little by little and test if the sour tast is just right 😊

For sinigang, I only sear the pork if I'm using all boneless cuts and I'm worried about not getting enough flavor without the bones.
