Made this tonight and it turned out exactly like yours did. Used chia seeds instead of sesame seeds, and about 5 teaspoons of psyllium husk powder. Glorious results, will definitely make it again.

Its turned out amazingly, I am so pleased and will be making it every week ,as I am on a low carb diet. I am trying to cut carbs all together. It could be due to the sunflower seeds as it can react and turn green with baking soda and baking powder to some extent. But the acid from apple cider vinegar helps to neutralize the reaction. Thank you so much for your feedback 🙏

Once I tried a similar, home baked bread I was hooked. I also make Nordic bread, aka as seed-nut-egg bread because that is all that’s in it. Some recipes call for oil which I don’t add. Seeds and nuts are high in fat. I have had lifelong gut issues which disappeared once I began eating it. I no longer add eggs but use water with ground flaxseed or chia seeds as a vegan substitute.
I made this today. I weighted everything, but halved the recipe because I wasn't sure I was gonna like the sunflowery flavour. I made two errors, well 1. First I used roasted and salted sunflower seeds, because that's what I had. So I did not add any other salt. Then, I forgot to half the psyllium husk! So I added twice as much fibre by mistake. I kept all other measurements correct. The middle bottom part of my bread is very dense. Actually all of my bread is not as light or fluffy as it looks here in the video. It's denser. The middle bottom kind of still feels moist even after baking for an extra 10mins. It also did not rise as much as I think hers did here. It's good though, I like the taste and the texture is fine, I just slice it very thinly so it's not too heavy. Also the middle part is totally fine when toasted. I would love to experiment mixing this sunflower "flour" with another type of flour.

Did you use whole psyllium husks or preground psyllium powder? There's a huge difference and most keto bread issues are caused by inaccurate use of psyllium husks. You can use store bought liquid egg whites. I have not tried it with egg white powder so am unable to advise. I have also not tried the yeast version yet. Even if you add yeast you will still need baking powder as non gluten bread especially with low carb flours does not rise as much as regular bread
I have tried xanthan gum before and found that it does now work well for bread. The bread does not bulk up and texture is very sticky. Psyllium husk is still the best replacement for gluten but you need to use it properly to get better results.
Do you think ground sesame seeds can be safely swapped as the base flour rather than sunflower seeds? With of course the addition of a mix of whole toasted seeds as you used them.
Frankly I have not tried that for this recipe. I do have bread recipes using sesame seeds so I suggest you follow those recipes as the ratios may be different. Then just add the seeds. Check out the BREAD playlist for the sesame bread

If you are referring to the seeds from the crust it's quite normal. You need to press the seeds down so that they will stick to the dough or brush the top with water then apply the seeds and press down to stick. Even then some will still fall out during slicing. Alternatively you can do away the seeds for the crust

Most keto bread dough are sticky due to the gumminess from the psyllium husks so it's normal but it will bake up fine. Even after baking you will find the texture a little wet and sticky which is also normal. After toasting they will be dry and crispy

You can replace with white vinegar. The vinegar helps with rise and texture but it's not fatal if you omit it

Raw sunflower seeds are better as they will be roasted during baking already. Over roasting will make the baked goods dry.

Yes but you need to make them into buns as shown in this video. It didn't work with loaves unfortunately.
