    Thank you so much. I made prawn risotto with the same ratio 1-2 in the pressure cooker.. wonderful result.. no more standing around stirring. Enjoyed a nice glass of Monte Carbonare with family while it was cooking.. everyone loved it, even nonno. grazie 😊

    Tried this in my new Instant pot duo and it was amazing! I've always cooked it long and slow in a pan before but this was so creamy. I added some finely chopped mushrooms before pressure cooking and then 2 handfuls of Parmesan and a cup of cooked chopped chicken breast. My daughter who said she wasn't hungry finished a huge bowlful. But I wouldn't have tried it if I hadn't seen your video. Many many thanks.

    I have made this many times, always perfect. I cook up some mushrooms & chicken to mix in at the end.

    I make a lot of rissotto by hand and wondered how the texture of the pressure cooked variety varied from the hand-stirred method. Almost looks too easy to be true!! I've never owned a pressure cooker or instant pot, but this could maybe tempt me. What are your thoughts on stove top pressure cookers versus instant pots (sorry, if this has been asked/answered before, please just tell me to go search your videos or something :-) ) TIA. Love your video by the way, and the fact you can pronounce the word rissotto properly unlike 99% of the videos on UA-cam.

    I made it last week as a side dish and it came out just perfect. I'm planning to do this again this week, but not as a side dish. I'd like to add some chicken breast and maybe some veggies. Any suggestions how to do this? I mean, I could saute the chicken together with the onion in the beginning, but I don't know if the 7 minutes are enough/too much for the chicken breast. Should I cook the chicken and the veggies separately and mix them afterwards?

      Anca, click onto the recipe online and you'll see suggestions on how to count the veggies as water. Italians don't put chicken in Risotto so I've never done this. You may want to saute' it and add a little less water to compensate for the liquid in the breasts. Ciao! L

      Thank you so much for replying. I think I'll stick to the original recipe. Why mess with perfection? Maybe I'll grill the chicken separately. What do Italians usually serve with Risotto?

      Anca Antoci we serve risotto as a first course, then we serve the meat in a second course with vegetable side dishes. It can be any meat dish like Osso Buco, Roast Chicken, Beef Roast. Thanks for asking! : ) Ciao, L

      I think I'll do something else with the chicken I have in the fridge and save the risotto for the real Italian experience. I've just taken a quick look at your website and it's AMAZING. I don't know why I haven't seen it before... Whenever I pressure cook something I search Google for time charts and what not. You have it all right there (which you already know....please, excuse my enthusiasm, I'm like a kid on Christmas right now!). I'll use my pressure cooker more from now on. Have a lovely day...or night! (it's 9 am in my part of the world..)

    If I want to make the same amount of risotto you made...may I use 8.5 quarter PC? I did not buy a set, so I am wondering if I should have had instead. Thanks

    Is the stock a "chicken stock"? I pressure cook a lot of chicken.. could I use the left over liquid from that as my stock for risotto?

      Yes, you can use any stock you like for your risotto to get the effect you want. Chicken stock is an excellent choice.

      That's a Kuhn Rikon pressure braiser - it's very nice! I've moved mostly to electric pressure cookers but they still don't make them in this shape! Ciao, L

    Which stock did you use veggie or chicken stock

      You can use any stock you like - depending on how the ingredients will match. For a plain risotto, like the one in the video a stongly-flavored chicken or meat stock is best.
