Gotta love how selfless the boss is. He wishes Jeff to open his own shop, ready to help him with everything he got, and even hopes that his own customers go to him in the future. That shows how kind he really is and his close relationship with Jeff.
I think the boss knew his body wont be able to do this forever and there will be a time where he had to retire. In a way he is already appointing jeff as his sucessor because jeff is worthy of it and he can clearly see the sincere passion from him
that's how artisans work - they train the next generation who's willing to learn.

I met him when I visited Fukuoka. Super nice guy. Speaks French, English and Japanese. And their yatai stall does some Okinawan food.
Jeff is a very charismatic and vivacious young man. His boss is a very sweet and thoughtful man, and one can tell that he thinks of Jeff as his son. I wish them both well, and a long father and son relationship, and well wishes for Jeff on his training, passing his exam, and opening his own stall someday. ♥️♥️😃😃

not only his Japanese is fluent, his mannerism is so natively Japanese! I hope he makes it since he really feel like someone who really appreciate Japan in depth and not just another crazy gaijin.

The atmosphere of this stall reminds me of a British pub on a weekend night, very cheerful, music, meeting locals and new strangers, chatting with the owner, etc.

This video clearly illustrates why I miss life in Japan everyday. I've had so many experiences like this where I would meet wonderful new people just from sitting down for a meal or a drink. Unfortunately, I can't think of a time I've ever experienced this in the US for many years (10+) now. I miss Japan daily for this reason and so many others.

He is the person who brings happiness to this shop. Luckily for the owner who got him and the other local guys. Those who came to help work there didn't seem to help much. Especially the one who smoke a lot.
And from watching many clips like this for me this restaurant makes look so delicious food like the restaurant in the expensive building.
