One thing I am trying out this season is going with a shorter length as an experiment, I've started doing it with my adjustable poles. I don't know if what you are commenting on is an artifact of GoPro recording and the fisheye effect? If you watch video of people using the chest mount while skiing it frequently makes their technique look terrible IMHO, and that's just due to the camera view. It makes it look like they are wildly swinging side to side across the hill and skiing in the backseat. Can you give me an example of a video of similar skiing that you think looks "good" from a pole usage perspective?

Probably out to Lower Stubs Trail and from there out to Snubber Lift. There's a small amount of walking involved if you go way down.
