    今天做了在香港非常出名的珍妮曲奇,每次都需要排队几个小时来买。我的朋友好心排了买给我试吃。之后我就决定看它包装的原料来尝试做。原来比想像中容易很多,只是裱化饼干时有点小小技巧而已。 应用了包装说明的小麦面粉给曲奇咬下去有珍妮特色一丝丝口感,而且真的入口即化,很香的牛油味饼干。好吃~
    Today I made the Jenny Bakery Cookies, very popular in Hong Kong, requires long queue for several hours to buy each time. My friend kindly ordered it and bought it for me to taste try. After that, I decided to look at the ingredients in its packaging and give it a go. It turned out to be much easier than imagined, just require a little technique when piping cookies. The wheat flour stated in packaging gives the cookie silky texture when bite into it, Jenny's characteristic taste, and it really melts in the mouth, very fragrant buttery cookies. Delicious~

    =Wilton 2C 裱花嘴=
    225克 无盐牛油(软化)
    65克 糖粉
    3.5克 盐
    225克 小麦面粉/低筋面粉
    80克 玉米淀粉
    (预热烤箱150C: 30-40分钟)
    (上下火,不开旋风,中层烤)
    (上色,调烤箱180C: 2-3分钟)

    225g Unsalted Butter (Soften)
    65g Icing Sugar
    3.5g Salt
    225g Wheat Flour/Low Protein cake flour
    80g Corn Starch
    (Preheated Oven 150C: 30-40minutes)

    (Color, Adjust Oven 180C: 2-3minutes)

    »面团记得要一次性剂完,放置太久会干的硬很难剂花了。
    »记得预热烤箱至少15分钟再烤
    »烤的时间跟自家烤箱加以调整,要更加入口即化/软些烤短些。
    »dough must be piped in one go, dough place too long will harden and hard to pipe
    »rmb to preheat oven for at least minutes before baking
    »baking time varies depending your own oven, adjust accordingly. For even more melt in your mouth texture can bake lesser.

      @@maggielau7278 你的面团应该是加入面粉后翻拌过度了。不然就是拌好放置太久了,越久会越硬噢。像影片说的裱花袋要买厚的,不然就试看放双层

    试了好多配方 终于用你的配方成功啦,不过我想在这里补充一点我的想法,我看评论里好多人都遇到了配方完全和视频里一致但是面团硬到挤不出,我也是这个情况,可能是面粉筋性的原因。所以我最后在曲奇面糊里加了一点牛奶,软硬程度调整成和这个视频里一样,然后挤的时候非常顺滑,之后放冰箱一会儿再烤花纹都没有塌。口感超级好,没有因为加了液体而受影响。 谢谢你呀~~~

      @@vivancuteify 这个跟面粉的筋性有关系呢。按照这个频道的食谱做出来面糊之后,我又加了5-10ml的牛奶,最后调整到和视频里一样软就好了,你可以先加5ml试试,不行的话就一滴一滴加直到和视频里一样就好~

    This recipe is great! It feels melt in your mouth too!. And it also does not seem too sweet, so I will not have to cut the sugar. Previously i tried some other recipe that had too much cornstarch, which ruined the taste. This recipe is just nice and easy to follow.

    I did it but the flower design weren’t prominent n flattened slightly or spread after baked. Before baking, it was tall n beautiful when rested in the fridge. I measured all ingredients exactly so what could have gone wrong? I tried 3 batches n all same despite keeping them longer in the fridge. Thanks in advance for feedback.

    I tried this recipe today with strawberry flavor. This recipe is a bit too soft, it taste great and crunchy and melt in your mouth but it’s very fragile just touch by fingertips the design got smashed. When it store in container it breaks easily. It that how supposed to be?
    I tried other matcha and chocolate recipe it would break Easily like that .

    Tried making yesterday, it was so good although I think I overwhipped slightly as there were some small hard bits? Also I had trouble piping as the bag kept bursting but later used 2 piping bags, it was a breeze. Thank you for the wonderful recipe!

    为什么不要开旋风? 我的烤箱比较搭,可以同时烤3个盘,所以一般会开旋风,然后她降低烤箱温度。

    Hi! Wanted to comment to tell how great this recipe was.
    I used this recipe to make raspberry butter cookies and they were heavenly. I’ve tried many other recipes prior to this and all of them rose and expanded a little, but your recipe was the best. It held its shape well! Kudos!

    今天试做了这款cookie, 我觉得不会再做下一次了,前面步骤都很容易,但一到裱花袋那里,简直快疯了,真的真的非常难挤,刚开始用了普通plastic 的裱花袋,全部都爆了,最后又试用比较厚的silicone 质量裱花袋,轮到我的nozzle 一直被挤出来反复拿进拿出我的曲奇面团,彻底放弃,最后弄成German cookie 形状,我想不会我不会再有下一次弄jenny cookies 了😅手到现在还疼

    Made about 70 cookies using this recipe. Had to bake in two batches. The first batch piped beautifully, but impossible to pipe the second batch which was very moist compared to the first batch. I can't understand why the dough could not be piped. Anyone can enlighten me?

    Hi, may I ask, why the piping process is so difficult to squeeze up? I feel the cookies dough is not so moist , that’s why when pulling out, it’s not so smooth. Does this related to what brand of butter we use or the the 裱花嘴,will make the process more harder. Please advise .

      Your butter already melted due to high room temperature, pls be sure your butter is just soften not melted, or else butter will be separated during baking. Also be sure to chill piped cookies in fridge to set before baking

    tried making this today and its very good! note to all that the butter has to be veryyyy soft otherwise it will be super hard to pipe. i made this original flavour and the choc flavour (in the other video) today and i liked the original one ALOT more than the choc

      I tried a few times. If the batter is too stiff, adding a bit of milk will help smooth out. Or you can melt down half of the butter and the other half soften completely.

    今天刚做了 😁 挺成功的 😁 真的超级酥和入口即化 😍😍 butter方面我用了margarine来代替 是可以的 😁 只是我的面团有些难挤出来 可以知道是什么原因吗 🤔 因为我挤到我的silicone挤花袋破了 😂😂😂 最后就没挤花的形状了 因为家里没有多余的挤花袋了 就自己用手搓圆弄形状 😂 不过味道还是很好吃的 😍 能请问是什么问题弄到面团那么难挤吗 ? 是因为我用margarine吗 ? 因为我全程没放过面团进冰箱 就连烘烤之前都没有 😂

    Hi! Can I check why does my cookies sink after baking them? It was tall when I piped them out but it sinks during the baking process in the oven. Any idea if this is caused by over-beating of the butter mixture? Thanks!

    They look fabulous! What I don't see in the recipe, is vanilla. Spritz cookies are all about ratio and it's so hard to get the right piping consistency. Some recipes have whole eggs - some have only egg yolks, and in this recipe - none at all! Here I see equal amounts of butter and flour to make up for the added corn flour, whereas some recipes don't use cornflour at all... Does this recipe work well with a cookie press (pump)? Also, I don't see why you don't use a fan oven... any particular reason?

    Hihi, thank you so much for the video. I love the recipe!
    When I was doing the piping my dough was very hard and pipe super tough.
    Could it be I didn’t fold enough?

      Most likely due to overfold/ take too long to pipe, the longer the dryer the dough thus the harder it will be. So must be fast and make sure to cover well so dough wont dry out

      I had the same problem. But towards the end when the dough got lesser, the piping was a breeze. So I thk can reduce the amount of dough in the pipe next time round to see if that’s the case.

    is wheat flour and wheat starch same? are u using the sea salt? ur salt colour is pinkish, can we use normal table salt?

      Using cake flour and low protein flour will be the same texture

      可能面团加面粉后搅拌过度了,而且面团放置没盖过久会干,所以动作要快,越慢越干就难挤了

      4:38 的时候有说。要拿去冰箱冷却一下,好让牛油定型。 我之前不晓得牛油最后要定型的时候也试过,饼干挤在烤盘上时,個個立正站好,美,真美!後來進烤箱5分鐘以後,呵呵....大型翻車現場😓😓

      I don't have stand mixer, also each mixer have different force, dont judge by time, judge by consistency and volume color change see video clearly
