Coffee jelly
- 350g water
- 10g inaaga-A powder (or other gelatin option)
- 6g instant coffee
- 7g monk fruit sweetener (or sugar)
Milk tea
- 550g hot water
- 20g black tea (loose leaf or tea bags)
- 30g monk fruit sweetener (or sugar)
- 330g unsweetened oat, soy, or dairy milk
* mL and grams can be used interchangeably here for the liquids
* if another gelatin option is used (ex. agar agar or gelatin powder), please adjust liquid ratio if needed and activate as per instructed on packaging

Okay I tried this but didn’t see the note about using different measurements when using agar agar until after I mixed everything. So I ended up with a super thick jelly that I had to basically reheat and quadruple the water content in order to get a thin enough jelly to go up the boba straw. The part when you move the bottle with the jelly around shows the correct consistency that we should aim for. This video is good as a guideline!
I would say that I personally dislike the flavor of instant coffee though. Maybe using brewed coffee would be better, and potentially adding some cocoa powder to deepen and enhance the flavor. Thank you!

I’d like to use espresso for the coffee base. Should I melt the gelatin in the hot coffee and put it in the container?
Depending on the gelatin you’re using you may want to follow the instructions on how to activate it first!
