    Use ice cold water and cold butter for even lighter center and crisper crust

    Here is a typical blend of spices used to make mixed spice:
    1 Tbs ground allspice
    1 Tbs ground cinnamon
    1 Tbs ground nutmeg
    2 tsp ground mace
    1 tsp ground cloves
    1 tsp ground coriander
    1 tsp ground Ginger
    Blend all spices together, and store in a sealed jar away from light.

    Thank you very much for the video they remind me of my child the time my mother used to make these it was in hard times. Sometimes we would run out of flour and corn meal or we've had a cup of each and my Mom would mix the 2 with just suger and oil with a pinch of salt and fry them. So in those days she would put in our lunch ribs and sometimes it would be our supper and now to see you making them it has just brought memories back. I tried your recipe and they came out nice. I enjoyed them and my kids not so much. But it was a joy to see my mom's recipe through your video. Thank you so much keep those recipes coming I wish my mom was alive to see this.

    Put the butter in the freezer and use a grater to get small shreds of cold butter to work into the mixture

    Hi morris...thank you for your videos... today for the first time I was able to execute the fried dumplings with the fluff to it...thanks to you my friend. I was so proud of my self....u made it super simple. May I suggest that becuz so many ppl can benefit from your videos that you make it more user/visually friendly by using CC captions to your words spoken with maybe a capture of the recipe list capture on the side of the video... for reference.       Ingredients:
      2 Cups All-purpose flour (sifted)
      1 cup cornmeal
      1 tsp. salt
      1 tbsp. baking powder
      1/2 cup of granulated sugar
      6 oz water
      1 tsp. vanilla
      1tbsp. Butter
      1/2 tsp. mixed spice

    I cook really good caribbean food im haitian and i always love to try other cultures my soon to be husband is jamaican and i sometimed try to cook his island their way and he loves it..keep it up chef you are a godsend..like the yaadies say it ..uptop

    Write your recipes in a book and publish. Get Jamaican together to create a professional cooking network that is international but remember that by all of you doing this you won't be helping your Jamaicans in USA or England, because the Italians and French copy a lot of stuff.

    I would love it if you would re-do this video as you did with the fry dumpling this time with measurements which is what i believe make your videos so receptive with a larger viewership than other Jamaican cooking videos .....also add a suggestion on how not to get them crisp on the out side is it just simply not leaving them in too long?)

    If you want the butter fluffy use a electric mixer and mix the butter with the flour in the same bowl

      2.5 cup AP Flour
      2.5 tsp. Baking Powder
      1/3 cup Fine Cornmeal
      2.5-3 Tbsp. Granulated Sugar
      1.5 tsp. Salt
      1/4 tsp.Nutmeg (optional)
      1/4 tsp.Ground Cinnamon (optional)
      Pinch of Allspice (optional)
      2.5 Tbsp. Cold Butter
      1 cup Cold Water (add a little at a time)
      1 Tbsp. Vanilla Extract (combine with water)
      I did 1 recipe with the added spice and one without, I personally prefer the one without the added spices. I hope this helps

    I do mine without the vanilla and butter and allspice. However i do use icecold buttermilk sometimes instead of icecold water.
