  • Jamie's got some great tips for preparing and cooking fish, squid and scallops in this recipe. All made fresh and outside in his back garden. Yum.
    This recipe was first seen on the Jamie at Home TV series in 2007.

    Super underrated Chef. Such a cool guy. I had a couple of fellow Chef friends that met him when they were over in the UK, and they said he was the most down to Earth guy and took like 5-10 minutes chatting and taking a few pictures. To me, that's badass. He doesn't fuss over presentation. At ALL. It's all about loving your ingredients, and eating great food.

    One thing I like to do is prepare a seasoning paste of herbs like dill or fennel with thyme or maybe basil, if in season, along with garlic, salt, pepper, lemon juice and zest, all blended with olive oil. Then, when grilling a fish fillet under the grilled, I'll coat each side of the fillet when it's ALMOST cooked, just before turning it, so the seasoning gets a little heat to help cook it into the fish, without burning the delicate herbs. This works especially well with a salmon or trout.

    I like mahi mahi because it is firm without many bones. I usually use salt and pepper with garlic oil to season. I generally don't like fish but I love mahi mahi.

    Yummy, thanks Jamie.
    Sorry, but I just can't use nonstick pans, especially at elevated temperatures.
    The Teflon on the pan is Polytetrafluoroethylene which contains compounds of fluorine.
    Teflon will last almost forever.... if it's not heated.
    Low heat dismantles the Teflon slowly.
    High heat dismantles it faster.
    Where do the degraded Teflon and other compounds go when heated?
    We have to assume that at least some of them go into the food.
    As a rule, I don't heat ANY food in Plastic.

      Matt The Punk heat can kill most of the germs.
      And if doesn't have any pesticides then it's not a big of a problem.
      Though Washing is recommended.
