I saw this a few years ago and ever since I make my own kebabs about twice a month. I use Minced Lamb from the supermarket Finely chopped onion 1 Chilli (with seeds) Handful of Mixed Herbs 1 clove of garlic Garlic Paprika Tomato Purée Salt and Pepper Cook for about 20-25 minutes in the oven and serve on a Tortilla wrap. I put sliced onion, lettuce and hot sauce on mine and sometimes serve with home made spicy potato wedges.
i wish i could spend a day cooking and hanging with you and talking about the food industry it would be interesting to hear your perspective on things especially the school system from watching your older videos on school cooking

Completely with you there. Especially the school system. It's a hard fight but there are at least organizations popping up everywhere to fight the good fight. That's why I joined organization I'm with and we're in schools doing what we can!
Hi Jamie! I loved this recipe, it was like a bit arabic.... Kebabs are great! My boyfriend loves arabic food! I would love to cook this recipe for him one day. He would love me and never stop kissing me!!! He likes lamb dishes. It was great to see this tv series again. I used to watch it sometimes back then, when it was aired here on tv. Thanks for teaching me lots about cooking! A big hug from me in Sweden.
I'm sure Jamie Oliver knows its technically called a kofta, as do most people. He's calling it a kebab because he has to taper his way of speech to his audience,a lot of people don't know its a kofta. SO, don't think that you're above J O
I agree with you. In the long term,original name will be disappeared if they start to use other names just to get the audience. If it is Kofta,then it should be called as it is.
simon199418 Lemon juice can be added to kebab mince, but not in all countries: I think in Iraq & Syria they tend to add it to any mince meat mix, like in Dolmas ( stuffed peppers with mince meat) yet adding pistachios to kebabs is innovated.

If you're from the middle east, then you would (or obviously don't know by your comment) that there any as many recipes for kebabs are there are regions. Food from Afghanistan and Pakistan isn't going to be the same from Turkey and Egypt. The middle east is a region, and recipes vary massively, even in a single country. Its lime me saying "I'm from Europe, and that was an English cooked steak" Stick to making bombs.

Jamie must have seen this in Turkey. In Turkey it is referred to as "Adana Kebap".
kebabs refers to the method of cooking which uses a skewer... so it is correct. Although calling it a kofta is also correct.
