I never seem to have cornmeal on hand but learnt that you can make it out of popcorn,so that’s what I do now ,I shall make that too I made your cake mix one same day you put it out I even baked one to try it ,and to tell my faults I forgot the salt and I think that is why it did not rise to much ,but I remembered to put them in the other jars and I only put in one cup of sugar ,but I sliced some apples with a little brown sugar and couple T.melted butter on the bottom then poured the cake mix on top Yummo !!!!Thank you very much still looking for that spice mix ,but this cornbread bred recipe is a bonus !!!!!!!!!!

Amen. My family is from the south but I’m born and raised in CA, never put sugar in cornbread. My hubby is from the south and all he will eat is sweet cornbread. Ick! Therefore I never make either. Hahaha!
Thank you for this! My mom told me today that all she wants for Christmas is a basket of some of my canned foods so I think I’ll include this with some salsa, salsa verde and cowboy candy! And maybe I’ll throw in a can of diced tomatoes for chili to go with her cornbread 😊

Made the mix, found the corn casserole recipe, and made it for dinner. I added home-canned chicken and cheese to the casserole and made it a complete "meal" in one dish. Added salad and biscuits, and it was awesome. Thanks for the "mix in a jar" recipes.

I love the cornbread casserole with jiffy! I usually bring it for Thanksgiving. My husband loves jiffy cornbread but after getting cast iron cookware and making cornbread from scratch with actual cornmeal, that’s my favorite! I don’t think my husband likes it because more grainy in texture. I’m thinking about grinding it down finer next time and see if he likes it better and then doing what you did here. I had gotten a good deal on some cornmeal and would like to put some of these together
I think you added the correction for the oil in the wrong place - looks like it is in the directions for making the mix instead of making the end muffins or bread. Such a good idea and I will be doing this. Thanks.

This does not say how much oil to add. Do you put oil with the muffins and the bread too? It just says to add the mix with egg and milk. I'm sorry but I'm confused.

For pie crust it's more helpful for me to get some made up, rollout, roll-up and stick in freezer for ready made pie crust.

Made this and 2T Baking powder was too much. The cornbread tasted like baking soda. I'm going to try again with only 2t of baking soda.

yes, 1 jar = 2 boxes of jiffy
So are the recipes you posted for using the entire jar for each?
I think I will cut it in half and put it in pint jars. I only ever use one box of Jiffy mix at a time.
