- Eggplant, also known as brinjal or aubergine, has a mild, tender, and slightly sweet flavour similar to summer squash or zucchini. When cooked, eggplant absorbs the flavour of whatever it is cooked with and becomes meltingly tender. While eggplant isn't the healthiest vegetable, it is a good source of potassium, fibre, and antioxidants like vitamins A and C, which help protect cells from damage. Eggplant is also high in polyphenols, which are natural plant chemicals that help diabetics process sugar better. When buying eggplant, choose one that is firm with a smooth, shiny, and wrinkle-free surface. Eggplant can be kept in the refrigerator's crisper drawer for about three days, but try to cook it as soon as possible. Keep the skin on when cooking eggplant to keep the flesh intact. Soaking the eggplant in saltwater prevents oxidation, extracts the bitterness, and keeps it from absorbing too much oil. When you combine minced meat and eggplant, you get a variety of textures that complement each other well. If you cannot eat pork, substitute minced chicken or beef. Hope you enjoy this dish. Super Easy Braised Eggplant in Garlic Sauce w/ Minced Meat 鱼香茄子
Ingredients:
Serves 4 pax

320g eggplant (cut into chunks and soak them in saltwater for a few mins)
200g minced meat (we used pork but you can use chicken or beef)
1 thumb-sized chopped young ginger
5 cloves of chopped garlic
1 stalk of chopped spring onion (add the stem part first and only the green part at the end)
1 tablespoon spicy broad bean paste 辣豆瓣酱
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1 tablespoon premium dark soy sauce
0.5 teaspoon sugar
80ml water
1 tablespoon black vinegar
Some cornstarch solution

The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)

I made this using globe eggplant and without steaming the eggplant first it took a lot longer to cook the eggplant until it was nice and tender. It’s absolutely delicious, though! I used 1 tbsp soy paste instead of dark soy sauce and beef instead of pork and I didn’t use cornstarch solution. SO GOOD over rice!

Now i know how to make the eggplant softer! I always pan fried and needed a lot of oil, in the end my whole stove so oily. This is my favourite dish but seldom cook cos I need to use a lot of oil for the eggplant! Thank u for enlightening me ❤️

I followed this exactly. I don't know what I did wrong, but it did not work for me. I steamed the eggplant for much longer than stated in the video, but the skin was still very tough, and the flavor lacked the "wow" factor. Thank you for sharing this recipe. Hihi. I think that your fire could be too low so the eggplant didn’t get cooked. Another reason could be your eggplant is a little too ‘old’. You can get small eggplant instead as larger ones are usually considered old.

Loved the simple but delicious and healthy recipe. I saw another channel, where the eggplant is deep fried in oil. That was too much for me. Plus the waste of oil when you remove the egg plants after frying. Yours is much simpler and healthier❤.

Chingkiang vinegar has a very distinctive flavour - a lot more earthy/umami than white vinegar. For me I wouldn't make that sub, but I always have chingkiang from the local Asian grocer, if access an issue you could substitute (I would probably use a lesser volume of white vinegar).

There is bean paste, which is non spicy. I have both and sometimes I mix them together when I want a mild spicy flavor. Usually a company will be make both versions and they are next to each other on supermarket shelves.

Why is this dish called 鱼香 when there is no fish?
• yuxiang, a seasoning of Chinese cuisine that typically contains garlic, scallions, ginger, sugar, salt, chili peppers etc (Although "yuxiang" literally means "fish fragrance", it contains no seafood.)

Although leaving the skin looks nice but not convenient to eat you have to throw the skin while eating inside the mouth. I would deskin entire egg plant. Cut french fries size long & thickness 1 cm. Oil fried, press till fully cook and take away the oil, set aside. Stir fried mince meat, mince garlic, shallot mince, seasoning: Oyster Sauce, Light sauce, shaoxing wine, sugar a bit, dash of maggi soy sauce, enough water & starch t right consistency. Add in 1 nos green onion (cut long). Add in cooked egg plant, mix and serve.
