This is just incredible-I can't wait to try it-looks like one of the best things you've ever done!! I love risotto and my family does, too. (keeping the finishing broth warm-what a great idea!) And scallops-oh my goodness-that sauce is just inspired! One downside for us is my wife doesn't like scallops, so I'm thinking about chicken and finishing it with the same sauce. Very nice Looks great I am here with the result of the strawberry cake: First I will tell about the texture so basically it was not having a fudgy texture which I love and was the best thing secondly those chocolate covered strawberries were amazing it was a bit hard to find strawberry 🍓 but I promised my self I will make it and those strawberries were just out standing I literally got speechless after I tasted it it was soooo good I don't know how to express it . It looks brilliant - just one question - there are certain chefs that are always like, "'deglaze!" whenever they fry anything in the skillet. Is there any reason you cleaned the pan (6:38) before making the lemon caper sauce instead of deglazing? (I'm sure it doesn't make much of a difference either way, just curious if there was any particular reason)
why not add some butter when finishing the lemon caper sauce.. then drizzle the scallops... As another great redhead woman cook would say a little butter goes a long way.. that cook was none other than Julie Child
Risotto is too thick. It should be like a wave and creamy. Never stir risotto with a metal stencil - it breaks the rice, only with a wood spatula. I would cook scallions before the risotto and add it to it right away. Risotto tends to thicken fast

I also deglaze for certain recipes but the scallops actually leave a burnt residue behind which would make the sauce taste awful!

Hmm, I've never tried to make risotto with quinoa. Maybe you can do the same flavors but prepare quinoa the traditional way?
I keep my broth/stock on the stove top at the lowest temp so it stays warm.

Olive oil isn't good for high heat. It becomes toxic when heated too much
Be careful cooking the scallops or you'll hear "THEY'RE LIKE RUBBER BULLETS! COME ON!"
