Mushroom risotto is a real favorite in our house. When I’m feeling fancy I might finish with mascarpone or a compound butter instead of butter at the end. Looks delicious!

I love risotto, it’s one of my favourite meals and I love mushroom risotto. I usually have it if I’m out for lunch. Parsley is an often overlooked herb in the home. It goes with almost everything, it's delicious and very good for you. It makes a noticeable difference in a lot of dishes. Use it whenever you can people :) If I was to pick my favorite risotto, I would say...all of them :) This is a solid technique and looks delicious, good job(not Italian) Rik :) Risotto is creamed rice with no cream...amazing stuff. Tip: if you soaked any kind of dried mushrooms, save or freeze the juice and add it to your stock, if you going to make mushroom risotto, it really mushroomies it out :)
When I make mushroom risotto I soak dried Polish mushrooms, strain the liquid and add it to the chicken stock I use. The mushroom flavor is even deeper. I also add the rehydrated mushrooms in with the regular mushrooms. Delicious!
Gonna try a Mediterranean version of this with shrimp, lime, & cilantro on my next camping trip. Thanks for the inspiration! And the education as well. I’ve always been intimidated by risotto but you gave me the courage to give a go!

Perfection. We're in for some raw weather and this looks just like the warm comfort food we need. Have you ever featured a noodle kugel? Most recipes use cottage cheese, sour cream, milk and eggs with a Corn Flake topping but I've done just fine with blended cottage cheese and sour cream, a bit of sugar and the noodles. I bake mine covered to keep the noodles soft and sometimes add crushed pineapple. As with any dish of this sort each family has their own version that's the best. I'd be interested to see your take on it. Potato kugel is good, too, just more savory, not sweet.
I have not often seen mushroom risotto with just creamy coloured rice. My own and others I have been served, are more "muddy" mushroom coloured. From using mushroom stock, and the liquid used to soak dried porcini to include. I am going to try this version and see how it is in comparison.
I now have to use a wheelchair one of the rare benefits and hardest thing is learning to cook, sitting down, and it is hard going. Risotto that perfect dish to remember best ingredient is Time. I now wonder why I ever stood up to make it ladle of stock in, sip of wine and stir while reading....a perfect meal every time 😊
Rik, this demonstration makes me want to try making this myself. The two times I've tried risotto in two different Italian restaurants has not been a delicious experience. Frankly, it has had me wondering why it's loved so much. 🤔 I believe one should try almost everything at least three times.😊 So, I'm willing to try risotto again based on what I watched you do in this video. Hopefully, me making it myself will have a better outcome and a mind change about this very popular dish.🤞

The thing is, I've never seen, heard of, or eaten these old world dishes. It's all new and so humble and tasty. Thai food is easily available, around every corner there's a Thai place. Don't get me wrong, I love it, but the novelty has worn off somewhat. The market is saturated, even grocery stores have dozens of bottles of sauces. It's "choice overload" and costly. Please stay with simple down home affordable meals that warm the body and soul!
Great job, it looks delicious. I am lucky enough to own a Thermomix 6 which makes a beautiful mushroom risotto without having to stay and stir constantly. Also, if we don't have any white wine in (sacrilege) we always have Verjuice in the pantry and use that in place of the wine. Sometimes we also add some steamed chicken at the end. It is a delicious tasty meal. We are very lucky to live near the Barossa Valley here in South Australia and Maggie Beer a local celebrity cook makes a fantastic Verjuice. I love a mushroom risotto and yours looks delicious but the worst one I had was at the bluebird restaurant in Chelsea some years ago when owned by Terence Conran. By god, someone must have dropped the salt pot in there. It was inedible. Brilliant cooking channel and you teach such good tips. Love it
I told him he was being picky pick, but my Venetian friend the mushrooms should have gone in half cooked with the simmering rice, maybe that would infuse even more mushroom flavour?, anyhoos it looks good to me.

Yes warm stock or even hot if you can keep it that way. However it is not crucial. When adding stock it a small amount that will reheat quickly. Rice is a choice for you. Rinse or not. Thank you. Best, Rik

When cooking mushrooms I add a splash of water to the mushrooms, this opens up the pores and draws out all the moisture, wait until all the water evaporates then add your oil and butter, I find doing this, the mushrooms soak up even more juices from the risotto
Many supermarkets do not stock every type of Italian rice. Arborio is the most commonly used rice which is stocked. I don't have time to travel around looking for specialist ingredients. That being said most of the restaurants use Arborio rice. Thank you. Best, Rik

Looks delicious. I watch a lot of Italian cooking videos but one thing I have to say is that Italians often take food way too seriously... If you don't make a dish in an absolutely authentic way, you're bringing down the wrath of God. Now I can get away with that because I'm American from an Italian family, although they criticize a lot of our food too. It doesn't matter that people like my grandparents couldn't find the exact same ingredients that they had in Italy, or that even today, I can't find certain things - we're still accused of screwing it up. 😉
