I know you don't lose honor based on the mechanics of "not being involved" with his death, but this really is way more brutal than most of the ways you can kill somebody in this game lol.
Quick tip* instead of having to ride all the way to a river or body of water; just throw them in a pig or horse trough. If they are tied up and you get their head in the water they will drown. Also you can throw bodies in with the pigs and they will dispose of them for you; if you know what I mean...
It's a shame you lose honour for knocking out people, the amount of people that have been spared because I stopped myself from punching them due to honour is crazy, like when an NPC is just unnecessarily rude
I’ve got a better one I won’t lie I did it on accident but in west Elizabeth I was hunting for cougars there was two people trying to blow open the safe I didn’t want to lose honour but I did want the money so I tried to lasso and hogtie them I lassoed one and yanked him back on to the detonator switch and blew them both up no honour lost
This is why you will never get anywhere in the game you spent 10 minutes killing him this way when you could have just shot him and got the honor back quicker than that
Fun fact: if you do this while unarmed you will get a drowning animation and if you do it with a knife it will have different animation of you slicing the throat after drowning them
If you do the same thin while unarmed there is a cool animation where Arthur actually holds the persons head underwater and drowns them. Not sure if you lose honor or not for that though.

I didnt even know you could hold NPCs at gunpoint on the ground like that. I have hundreds of hours in this game. Easily in the top 3 games of all time by any measure.
Fishing and throwing the fish back gains you honour like mad though. I think you get about 20 points of honour for greeting 3 people but you get 100 for every fish you throw back. It’s also more relaxing imo and you can sometimes get big ones to keep and cook.
I’m playing this for the first time, currently on chapter 5. I’m playing with high honor. I’m playing the first game next since this is a prequel, but next time I play I’m playing with low honor.
