Recipes from Today's Video -
Italian Chicken Salad -
1-2 chicken breasts (I used leftover Marry Me Chicken breast)
Fresh Mozzarella Balls
Fresh Chopped Basil and Green Onion
1/4 cup Sun-dried Tomatoes in Oil
1/2 Avocado
pitted black olives
1/2 tsp oregano
salt and pepper to taste
Chop everything and combine. Serve alone or on wrap, pita, or sandwich!
Beef and Broccoli -
2lbs of ground beef, (cooked, rinsed, and drained)
1 large head of broccoli chopped (frozen also works)
Green onions and Sesame Seeds for Garnish!
1-2 cups of broth or water to thin sauce (bone broth adds protein!)
For Sauce - feel free to adjust for taste!
3 tablespoons soy sauce
2-3 tablespoons gochujang sauce
2 tablespoons tomato paste
2 tablespoons peanut butter OR PB Fit Powder
1-2 tablespoons brown sugar (I use zero calorie swerve)
1 tbsp of light agave or honey
1 tablespoon sesame oil
After ground beef is cooked through, drain and set aside. Add broccoli to skillet with oil of choice and sauté until fully cooked. Return beef to skillet with broccoli and add sauce to combine. Add broth or water to thin sauce and allow to simmer together for 2-3 minutes. Serve immediately over rice, and top with green onion and sesame seeds. Enjoy!

Amy, I saw the absurd comment about eating disorders and wanted to share with you that your content is so meaningful to moms like me.
I have always been pretty fit and happy with my weight and overall health. I have 3 kids and my third pregnancy absolutely wrecked my body. I found your weight loss video one night in my early postpartum days when I was crying in my nursing chair wondering if I would ever look and feel like myself again. And it’s been about 9-10 months now that I’ve been following along your journey and you’re my inspiration. I keep thinking “I can do it too and I will.” Please keep sharing your beautiful journey. It helps moms like me.

I find it so interesting how people throw that term around when you don’t want to eat garbage. I get lots of glares for wanting to feed my family healthy real Foods. 🤦🏼♀

If you’re trying to be healthy they throw around disordered eating around and if you’re overweight it’s “you must lack the willpower” or “you must not be taking care of yourself” there’s just no winning. We know how our weight/eating habits/lack of exercise can be the biggest factors in chronic diseases such as diabetes, heart disease, and even some cancers. So how can what this person is doing be disordered? We’ve literally been following her while she got her health back!

I hope everyone trying to lose weight keeps going and doesn’t give up. I have lost 30lbs in 2 yrs. 2 YEARS. It can take 3 for some. Weight loss sometimes is not a fast thing.
I’m on that pace as well. Looking at 1 1/2 to 2 years to come down 22 pounds. It feels sustainable.

I recently found you, and I to am on a lifestyle change ( journey) for the past few years.
I have already learned so much from you as far as drink you water!!! I was thinking of you this morning as I drank 8 cups and my smoothie!
I have had a few set backs as I have chronic pain from severe scoliosis and used to walk daily to help with my lifestyle - BUT early winter I got bursitis in my hip and then my walking came to a halt!
Followed almost immediately by the worst virus that hit my chest that I have ever known!
I am relying on puffers to control the wheeze and I have had 7 weeks of rest and this is when I found you!
I am binge watching allll your videos and adore you and your beautiful family.
Your soft spoken, humble voice is a comfort to watch- and congrats to you for a job well done getting your lifestyle under control.
I have at least 10 pounds left to go and while I can’t be physically active right now- I sure can watch what I eat.
So I added a bunch of peas to my chicken tomato soup to up my protein thanks to you and I bought salmon and Brussels sprouts for sheet pan dinner times two this week.

I discovered your channel about a month ago and you have inspired me so much. I’ve been able to lose 10 pounds in the last four weeks. I I do fast as well but am enjoying that. Learning that I can eat delicious food without dieting has changed my entire perspective. I don’t want to feel bad so I don’t eat the junk and I feel good! That’s my main motivation. Looking good is less important to me. Thank you so much. Also, whatever content you want to put out is entirely up to you. Hi Amy I look so forward to your videos, since I am now at my weight goal, I love the motivation and you are inspiring. It is great to see what you eat in a day, I’m always up for new ideas. I had commented to you how your fitness plan inspired me, I’m walking everyday, bought a smart watch and every morning at 7 am I head out the door and walk at least two miles, it’s my me time, then when I come home the chores await me, but when I’m out walking I’m not even thinking about chores, errands, cooking ,cleaning,I’m listening to my favorite music,I have met some nice people along the way who are out walking too. I live in a beautiful community with lakes and nature…. My weight has stayed the same, but I do see a difference in the way my clothes are looking, so I know I am looking more fit. Love you girl xo
