When you slide out the main panels and then set the middle panel, how does those all stay snug together? Did you add additional "window locks" for the middle panel?

Generally, for hardwoods, I start at 80, then go to 120 then 180 as my final grit. You can start higher with softer woods and plywood. Basically, the lower the grit, the more aggressively the sander is going to remove material. You usually don’t want to skip huge ranges, as there will be scratches left behind by the previous grit.
Thanks! I would definitely find an epoxy specifically marketed for use outdoors, as many epoxies will yellow over time when exposed to UV. Totalboat, the manufacturer of the epoxy I used, specializes in boat building, so I'd imagine they have plenty of options that would work for you.
How did you make the small insert cuts for the dowelled wooden biscuits inserts into the edge of each piece that you glued together with? Did you a special tool or jig do them?

Johnny, do ever tend to go through your milling process in more than one pass (leaving boards to set for a day or days and shift if they do)
For sure, pretty much always. This mulling process was done over the course of a week. Really helps the boards acclimate.

You said you drilled and tapped holes into the table, did you use some kind of insert nut? Or did you actually tap the wood??
I tapped the wood, I used the Wood Whisperer Thread Taps, they work great and are extremely strong.
