    INGREDIENTS (1 serving):
    For the batter base:
    ⅓ cup all-purpose flour
    ¼ tsp baking powder
    A pinch of salt
    ⅓ cup water
    ½ tsp soy sauce (as a substitute for dashi powder)
    For the mix-ins:
    1 egg
    1 cup green cabbage, coarsely shredded
    ¼ cup green onion, finely chopped
    ¼ cup Panko bread crumbs (as a substitute for tenkasu)
    1 Tbsp red pickled ginger (Beni-shoga)
    3 strips of bacon
    For the toppings:
    Bonito flakes (Katsuobushi)
    Green onion
    For the sauce:
    Okonomi sauce
    Kewpie mayonnaise (optional)

    This is challenging to find but do try to seek out imported Japanese Okonomiyaki flour mix or Korean pancake mix. Secret ingredient? The former has potato yam flour in it and the latter has guar gum - both add a slight jelly like effect - nice 😊

    Thank you SO much for this awesome & delicious recipe .In St Helens, Tasmania, we have a FANTASTIC Japanese restaurant restaurant called RAIDA & their food is SO GOOD!..Not greasy,...delicate & awesome...Clean, REAL food.....Whenever, I go to this Japanese restaurant, always, have the "Pancake" with prawns...Comes with an assortment of veggies & avocado & tasty dressing......

      Thank you! I don’t have a detailed recipe for the homemade okonomi sauce yet but you can make it with Worcestershire sauce, soy sauce (or oyster sauce), ketchup, and sugar.

    my version was more of an omelette with cabbage in it.. what are you supposed to taste more? The egg or the cabbage?

      The overall flavor of okonomiyaki is complex, with no single ingredient dominating. The strong sauce binds all the ingredients together, but I personally taste more cabbage than eggs.

    I'd have to skip the Bonito... Sorry, don't like fish, but WOW it looks tasty and simple to make.
    make your own tenkasu, its so simple, so why replace it with panko? But it is your recipe, and I think I'm gonna try it.

      You can sprinkle some furikake instead. It's definitely not an exact substitute, but it will still add a nice flavor and texture.

      Katsu sauce or takoyaki sauce may be the closest you can get. You can also make your own version by combining worcestershire sauce, soy sauce (or oyster sauce), ketchup, and sugar.

      @@marylockwood4400 - Look up Hiroshima-style okonomiyaki. It's more layered, rather than mixed together, and it's less doughy.
      Better, in my opinion. YMMV

    I feel like this caught on bc it was an amalgamation of nostalgic flavors for Japanese people. Maybe it was born from combining popular ingredients at the time that were leftover. Maybe it is bc they were more creative and willing to try different things. Who knows? I don't. Constantly debate making it but I'm not a huge fan of fish flakes.

      대신할 재료는 우메보시 정도가 떠오르는데 아삭함이 없어서 아쉽네요. 맛의 느낌은 좀 달라지겠지만 양념을 씻어낸 김치도 괜찮을 것 같아요. 베니쇼가를 안 넣고도 테스트해 봤는데 넣는게 훨씬 좋았어요.

    Can you replace soy souce with something else? It's so expensive and hard to find in my country that we can't really cook asian food because it's needed in everything.

      Fish sauce and oyster sauce would make an excellent substitute. If they are unavailable, other options would be Tamari or Worcestershire sauce. Hope this helps!

      That's what the okonomi sauce is for: to add a salty flavor to okonomiyaki.

    Squid is the preferred way. Take that bacon out of there.
