As stupid as it may sound, adding TOO MUCH dry can have the same result as not enough dry. The frother should be visible at all times in the mixture. If you can't see the whisk (outer ring) then you're too deep. Another method when it starts to thicken, is to repeatedly plunge the whisk into the mixture. This lets it hit the top with a bit more speed than if you were just holding it there, and lets you get deeper into the mix without covering the whisk.

Should work with instant espresso Though to get that much "froth' from the mixing, you will need to add some more water, depending on your cup size. You'll just need to add small amounts until you get the desired look you want. Just tried it with sugar in a 1:1:1 and didn't get much result until i added some more water
