Skyrim Special Edition: How to make your own Sweet Roll!

- To celebrate the launch of The Elder Scrolls V: Skyrim Special Edition Bethesda has partnered with Bourke Street Bakery to create the game’s famed Sweet Rolls!
Sweet Rolls have always held a special place in The Elder Scrolls universe and with the upcoming launch , Bourke Street Bakery has created their own Sweet Roll that stays faithful to the in-game item, but with a uniquely Bourke Street Bakery twist.
Thousands of Sweet Rolls will be handed out for FREE in-store, on Saturday, October 28 and Sunday, October 29 starting at 10:00am each day. Simply visit one of Bourke Street bakery’s eleven Sydney stores and ask for a Sweet Roll*. Stay tuned to Bethesda social media channels to check in on availability this weekend.

BOURKE STREET BAKERY SWEET ROLL RECIPE
This recipe makes approx. 6 x 100g Sweet Rolls. You will need the following utensils during the cooking process: table top mixer, muffin tray, paper cones & rice.
Hi Protein Flour 540gm
Butter Unsalted 270gm
Salt 10gm
Milk 190ml
Brown sugar 85ml
Yeast 20gm
Beaten Eggs 155gm
GLAZE RECIPE
Fondant” glaze is readily available at your local super market so if you wish to save yourself some time you can simply purchase some finishing glaze.
Or alternatively…
Icing sugar 110gm
Glucose 125gm
Water 15gm
Gelatine leaf 1/2

Bethesda was probably inspired by sugar glazed rum baba when creating sweetroll model. They asked some cheff to take a look at the sweetroll and he may have felt how similar it is to a glazed rum baba. Just my thoughts

UFO Piloot They're sick of cycling from The Elder Scrolls to fallout and back again. They're tired of it. There was a huge chunk of Bethesda's life where all they made was The Elder Scrolls games. Anyone would get sick of making the same thing over and over again, even IF it's in different countries.

It's not Bethesda's fault in this instance. Sony doesn't want to allow third party assets on their consoles.
The Outsider I'm aware, I just want to know if they're just going to say "good enough" and not keep pushing. I believe if both Bethesda and us work together we can get Sony to give in. I didn't intend to insult or blame Bethesda with the comment, it was simply a question as to what their current mindset on the matter is.
insanegames Don't get me wrong, I hate to defend Bethesda due to their behavior the past 4-5 years, but I was just calling it as I see it. However, yes, I agree. I think Bethesda needs to really push Sony to do the right thing here and we should too. They'll give in eventually, but it may be too late by then.

Someone stole my sweet roll
My dough was a liquid consistency, I left it in the fridge overnight did I make a mistake
I converted this from the official Bourke Street Bakery recipe guide for kitchens that use standard volume measurements (cups and spoons) instead of metric gram weight.
Skyrim Sweetrolls for Yanks
4 1/4 cups bread flour
1 3/4 tsp salt
1/2 cup brown sugar
2 1/2 tsp instant yeast
3/4 cup milk (room temp is best)
3 eggs (beaten)
1 1/4 cup butter (softened)
For the glaze
1 3/4 cup powdered sugar
3/4 tsp powdered gelatine
2/3 cup corn syrup
2 tbsp water
You'll need at least a hand mixer to do this recipe, which is what I used. The dough is so thick that it stalled out the motor of my mixer at one point. Unless you have the strength of Dova you will not be able to make this recipe manually. Also, if you want the really good Skyrim item look, you're going to need something bigger than the standard 1/2 cup muffin pan. It looks like they were using somewhere around 3/4 cup in this video. You might be able to find that in a kitchen store or online. If you don't use a bigger pan your rolls won't look quite right, but will still taste good. You can also find the paper cones you need for this recipe online.
Put the flour, salt, and brown sugar, yeast, and milk in a large bowl. Because we aren't using the fresh Brewer's Yeast they apparently have commonly available in Australia, it's a good idea to use room temperature milk. If you use cold milk you might shock your yeast. DO NOT USE ACTIVE DRY YEAST. There is no warm activation in this recipe at all. Your rolls will not rise.
Mix on low, and you'll be upset to discover that what you've made has the consistency of course sand. Don't worry. This is normal. Slowly add half your eggs, then mix on medium until combined. What you have at that point will be dry, crumbly, and still won't resemble dough. Dump in the rest of the eggs and the batter will quickly form.
Keep mixing until the dough is smooth, sticky, and elastic. This is where my motor stalled. What you're making has the consistency of a thick industral glue. Start mixing on low again and add the softened butter. The butter will loosen the dough and integrate. Mix until well combined.
Cover your bowl with plastic wrap and put it in the refrigerator for a minimum of 8 hours.
When you come back the batter will be like playdough, but it'll become more elastic as it warms. Separate the dough into 12 even pieces. I know the official guide says it makes 6, but that's an obvious misprint. This recipe clearly makes 12. Don't try to make six or they'll be gigantic!
Take each of your 12 pieces and roll them into long strings on a floured surface. Hit up your muffin tin with some Pam. Take each string and roll it around your fingers to form a doughnut shape. Place the doughnuts into the pan.
So at this point, the recipe guide tells you to put a paper cone into each of the holes and allow the rolls to rise. In my batch, I found that doing this causes the rolls to seal up around the tip of the cone, creating the same internal shape, but leaving you with no hole at the top of your roll. It may be a better idea to let the rolls rise, and then use your finger create a hole in the middle and insert your cone into that.
Either way, I'd skip filling them with rice. It was wasteful and didn't seem to do anything. Instead, just put a cookie sheet on top. The cones will be able to handle the weight, I guarantee it.
(Come to think if it, I'm wondering if the rice was there to keep the inside of the roll from burning? I don't know.)
Whatever you do, let the rolls rise for three hours. If you're worried you're not getting a good rise, try putting them somewhere warm.
Preheat your oven for 350 f. Place the tin with the rolls, cones, and cookie sheet onto the oven. Bake for 36 minutes. Take the rolls out, remove the sheet, throw away the cones, and remove from the tin. Allow the rolls to cool completely.
That'll happen faster than it seems like it should. (I think it's the shape) Quickly mix your powdered sugar and powdered gelatin in a bowl. Then mix the corn syrup and water in a pan and bring to a boil. This will also happen very quickly and smell very bad. Quickly remove from the heat, and while mixing on low combine all the ingredients in the bowl. When they're integrated, increase the speed to medium and wait. Keep mixing until the glaze is cool and almost completely set.
Glaze the side of the roll which was in the muffin tin, of course, and allow the icing to drizzle down the sides.
