    What a beautiful video! Thank you for sharing some of your life with us, Miwaさん. My father passed away in 1998 and I miss him-especially when I have questions about gardening! I feel the sorrow when someone passes is like a square turning in your heart, with the sharp sides digging in. Eventually the corners wear away and the square becomes a circle, but it's still always there a little, spinning. We never forget those we lose and as long as we remember them, they are never truly gone. ありがとうございます

    I started having digestive problems a few years ago and decided to focus on gut health to heal my system. Now I'm living in Japan and are only familiar with a few fermented foods here, so I love seeing your content about gut healthy options in Japan!     I am a Type 1 Diabetic! Someome suggested the Japanese Diet (aka typical Japanese food, not package ramen) so I can control my blood sugar better. So far, Miso has been the best food for my blood sugar! I like your videos because it helps me understand how to make good food that allows me to live my life to its fullest :D thank you!

    Wonderful video Miwa-San. A very good reminder that in addition to taking care of our family, we must also take care of ourselves. And gut health is extremely important….you are right, everyone will figure out what works best for them with trying different things.     Where you emphasis "personal" that is so important. One of the reasons nutrition is so difficult to study is that in fact there's a lot of dependencies on each individual PERSON and what suits them first. So you are very right to emphasis this.
    I found this very useful because I want to learn about Japanese cooking but with all cooking, starting with a foundation in health and nutrition then building upwards eg taste/flavours and cultural recipes.
    One area to emphasis in connection with the gut is ABSORPTION. A very important area in connection with gut microbiology is the absorption of the actual food VIA the gut so that the nutrients are actually absorbed successfully as well as ingested. I have hyper-sensitivies about a lot of things including my gut, so I can only eat small amounts of food at a time or otherwise feel bloated but equally need to eat about every 4 hours to create energy or avoid feeling faint. In the evenings, a Stock based food is best for me as I can absorb the nutrients easily, drink the liquid and feel full and satiated due to the high nutritional value yet not feel bloated and not eat for the duration of sleeping (about 7-8 hours). So a home-made soup or Ramen for example works wonders for me at this time.
    As for healthy foods for the gut, I find wheat or gluten generally does not sit so well with me so I reduce this or eat better versions eg sourdough bread only. Equally what to avoid, what to eat more of: Fermented foods! My brother makes Kombucha and Kefir live cultures (the supermarket stuff usually is not authentic to be aware of!) but that is quite a life style choice so I enjoy Kimchi, Saurkraut and Miso more in my diet as well as pickles (eg that delicious pink pickled Japanese ginger). They compliment foods with their flavours and seem to be good for the gut as well and sit well in the stomach.
    In the morning it is good to eat protein to create that satiation effect more easily as well and again feel less bloated. I saw on another channel: Rice with egg and sesame oil and soy sauce with some chopped spring onion and it seems a very nice morning breakfast perhaps with miso soup (I often take miso soup in a thermos to work as a snack). Again if I have bread/toast in the morning then sourdough. For lunch I eat a salad and often use as a salad dressing Apple Cider Vinegar too. With respect to vegetables, I think pickling and fermenting them probably helps with digestion of these also. In addition the pigments tend to be a good or close correlation with particular health benefits eg beetroot, carrot, spinach, tomato etc are all very vivid pigments and probably possess some nutrient or mineral that is beneficial accordingly. But again ripeness and seasonality and the cooking process and combinations with other foods can all influence the effects.
    I've never tried natto but will do so! Hopefully some of the information above is useful.

      For carrot/sweet potato/pumpkin, the bright orange color is from beta-carotene, or vitamin A. I'm trying to learn more nutrition like you, and was surprised to learn about such a direct correlation between orange vegetable color and nutrition.

    Thank you so much for sharing Miwa! It’s funny, everytime i start eating unhealthy I’m guaranteed to get pimple’s on my face. It ALWAYS happens. I don’t know why i am so sensitive to unhealthy food while my friends can eat a lot of it and maintain good looking skin. It used to bother me but now i’m really glad my skin is like this. It is just showing me when i’m not taking good care of myself. I used to have a lot of acne even after puberty, but now i realize it was just a sign of my bad eating habits :)

    I have watched your channel now for a few months and have really enjoyed your recipes. I appreciate simple recipes as I don't like to take a long time prepping for meals.     I've struggled with anxiety for most of my life, and I find food can have a big impact on my mental health. For me, corn and tomato give me stomachaches, and corn or potato make my anxiety worse. When I tried an elimination diet on corn and corn syrup, my anxiety improved a lot.
    The nausea I would feel every morning when I ate a lot of tomato was agonizing. Now, I use tomato paste sparingly just for the acid and flavor, like I use wine, and found small amounts of tomato aren't as bad.
    I really enjoy potato, but I try to have rice or oats as the carbs in my other meals, as I find those two grains really help my digestion.
    Nutrition and food sensitivity is absolutely an individual thing, and figuring out how my body responds to food has been an impotent step in becoming more aware of what my body is feeling and how to take care of my body and brain.

      So true! For me, it's green shakes, that are killing me! I tried different combinations for a year and though it's considered healthy, it just doesn't work for my body. I do eat raw fruits and vegetables with no special problems.

    Great video! I enjoy your Japanese breakfast videos very much. I don't eat animal products and can't digest tofu or unfermented soy products, so sometimes I struggle to find a protein source that goes well with the Japanese flavors.
    I especially agree with your statement about listening to your body and keeping track of how you feel after eating certain foods. We are definitely unique individuals and there is no one size fits all.

    Sorry to hear of your loss even if it happened 4 years ago I can understand the sadness.
    I know how important it is to keep your gut healthy (and your mental health) but is is sometimes easier said then dane hahaha with the stress of being a mom, the strange times last few years etc. In Japan I love the probiotic drinks and some vitamin/collagen drinks, but here besides yogurt and some probiotic milk drinks we don't have much.... perhaps sauwkraut in the winter. in general I try to eat varied, many vegetables and not to much fat. And for bowel health I love konnyaku products, but I'm sure there are many not agreeing with me about konnyaku being tasty. And here fruits are really promoted so I love plums and such.
    Most I had to figure out myself what works for me. I had talks with my docter but the advises are very stuck on traditional Dutch diet. Not saying that that is worng perse but it doesn't work for me. Japanese food is lighter so perhaps I like it therefore and been eating it regularly for almost 19 years now.
    thanks for sharing your new years. I made a one pot soba dish this year with a teriyaki chicken (but you could use tofu), asparagus and snappeas and of course soba and stirfry it. It made a nice change to the dipping soba I usually have :) It's fun to see teh otoshidama ritual of giving money to children. i grew up with it but it's rare here and my husband always shakes his head saying it's unneccesary when my parents give my daughter some new years money.

    These are wonderful, down to earth ideas for anyone, regardless of where they are in life. Agree with you wholeheartedly about the ferments.     I love your videos. I think it’s very important as you say, find what works for you. For some reason, fermented foods cause histamine reactions for me and have really terrible effects. It makes me sad because I love this type of cuisine.

    I make lots of picked vegetables. I make NATO but not very well. I eat legumes to feed my gut bacteria. I love miso.

    I think people wanting a quick fix for their health, is one of the main reasons why so many people are unhealthy. It’s simply not how it works, and not how it will ever work.
    The second reason (and perhaps even more pervasive) is the idea that cooking healthy foods either 1) is too hard or time-consuming, or 2) that somehow it is flavourless. Neither of which is true! Certainly, when someone has eaten highly-processed foods for their entire lives, their taste-buds will have been significantly altered, and real food will likely taste less desirable. But the period of adjustment really isn’t very long, and once you can actually taste the food you’re eating (not tasting the flavour chemicals you’re used to), healthy food is completely delicious! Believe me, I come from eating terribly processed food for literally my entire life, so I know what I’m talking about. Since completely cutting it out in early summer last year, my gut health has also greatly improved. It has a way to go I think (that’s a lot of damage that I did, and it takes time to build up again), but the difference is incredible. I do need to start making kombucha at home again though, drinking that regularly (and only about half a cup each day), helps with my sleeping immensely. Learning about the microbiome, and how it affects all parts of our health, is VERY interesting!

    Speaking of gut health, are there any traditional Japanese recipes for brown rice or other whole grains like millet or buckwheat? I've been trying to incorporate more into my everyday diet.

      Thank you Tessa! I just use random skin care products from the drugstore. I think it mostly stems from how I eat. I used to have eczema when I was little, so my skin is very sensitive though...

    I was looking around on your website and really want to get away from all these western diets, especially since western medicine has failed me. I’m currently battling C Diff, which is a bacteria infection of the gut. I got it after taking a round of antibiotics. I also have ulcerative colitis. So needless to say I need help and I’m completely desperate. Which one of your books would be most beneficial for a person that is allergic to shellfish/seafood but still wants to explore a healthy Japanese diet???? Any help will be greatly appreciated, thanks much❤

      My vegan cookbook doesn't contain any of those you mentioned. but I'm not a doctor, so I can't galante my recipes will heal your gut... I wish I could help you though.

    Good channel. I also recommend "Early Time Restricted Feeding" it means eat most of food early in a day, less food in afternoon, and no food at night. This is also called "intermittent fasting" by eating only in 8 hours period. The reason is body's circadian rhythm (internal clock) and body's insulin is more effective in morning, not night. Eat at night is unhealthy.
