    YES. Thank you. I’m really sick of fellow vegans saying “It’s 202(3). Stop complaining about vegan cheese, it’s great now.” No. No, it’s not. It’s still pretty awful, by and large. Anyone saying that either never loved cheese to begin with or are deluding themselves. Some of the artisanal soft cheeses are fantastic (sup Bestie’s cheese case), but I’ve yet to find a really good vegan hard cheese or mozzarella on the market. Miyoko’s is the best readily buyable store brand by far, but the real deal is from scratch kitchens like yours or Scratch House/Donna Jean’s - and one of the keys to both of your successes is not trying to pretend that it’s traditional dairy cheese. Psyched to try New Culture and other cow free dairy options once they’re available, but y’all are leading the pack.

      Chao cheese is amazing, I'm French so I love my cheese very much and this is one of the cheese my French Chef's dad loved. The rest is meh, but Chao is basically like the real thing. The spicy Chao slice is magical.

      New Roots from Switzerland is also great if you come to Europe, they do all things '' dairy '' now from cheese fondue to double cream

      Violife had a hard block of sharp cheddar I believe and it like DOESNT exist anymore but it was so good. Like quintessential cube of cheese with crackers good.

    I'm glad you're so honest about the texture and flavor. I hate when people are trying to make it seem like it's so good, when it kind of sucks. Haha. Just cause I don't eat dairy doesn't mean I'm gonna put up with something subpar. I'd rather do no cheese than vegan cheese at times. Except at Hot Tongue. XD

    Agree, (way) less is more with every vegan cheese. 🍕 I had actually given up on even using “cheese” and just focus on sauce, fresh herbs and vegetables, but I’m curious to try the Miyokos liquid! Thank you 😸

    I can't stand the weird flavor and gummy & waxy stuff they put in in many of vegan cheeses out there. The only brand I use is Miyoko's and my own homemade vegan cheese . Miyoko's butter is also the game changer for the vegans! Tastes amazing with that cultured butter flavor and bakes beautifully🤩

    daiya switched their formula in 2015 and it was terrible and they did it again recently. it just doesnt melt and it's plasticy and sticks to ur teeth. i cant wait to try your homemade mozz
