    updating-
    I made the cheese (but without the salt) added vegan probiotics with a lot of lactic bacteria and transferred to fermentation in a warm place
    (fortunately yesterday was one of the hottest days in Israel, 40C in the whole country, so I could just leave the cheese in a dark room without air conditioning and that was enough,
    if the climate in your country is more sane, heat the oven to 50C, turn it off and put the dish with the cheese covered with a dark towel into the turned off oven. Leave it in the oven for 24 hours)
    After 24 hours the cheese has a distinct taste of...cheese!
    I divided the cheese into 2.
    I returned half the amount to the food processor, salted, cooked agar, added it to the fermented cheese, corrected seasoning and manually mixed walnuts to the cheese. (other options-olives, dry figs, smoked garlic,mixed dry herbs)
    I transferred it to the refrigerator in silicone molds. It got solid very fast.
    From the other half I made ...mozzarella...
    I salted, corrected the seasoning but
    Instead of agar, I added 2 tablespoons of psyllium powder and a little vegan milk to the cheese.
    I mixed it in the food processor until the cheese became thick and viscous. I dipped my hands in water and made mozzarella balls that stretch great on toast or on pizza.

    That almost looked like a pesto recipe at the start there. Lemon juice, seeds, garlic and even nooch! Can't wait to try and make this myself. As a dairy man, degree and everything, it's so cool to try these vegan recipes out.

      No way. Pesto needs lots of basil, olive oil, salt, garlic , pine nuts and parmigiano reggiano.

    Lovely video! ( the music, the focus on the food, without unnecessary chatter. I really liked it!)
    First time I see smoked powder. Do you have a link to buy this product?
    I thought of trying to ferment the cheese with lactic probiotics and at the end add the boiled agar to it, so that the cooking does not kill the bacteria.
    If it works, I'll report back.
    In the meantime, I have a smoky flavored liquid.

      🟢 Modo de preparo:

      ☘Segundo passo/ Misture o ágar-ágar com água e leve ao fogo brando até virar uma geleia

      Agh. I am frustrated. The notes say 2 pints of water.

      2 pints = 4 cups (8oz per cup).
      I made the recipe with 4 cups of water and it is like a thick cream sauce and is not a solid cheese. It tastes good and I put it potatoes but it is not cheese.
      Please fix this recipe.
