I love your videos, Ms. Larson. I have many of the piping skills you demonstrate in your tutorials, but they're not as sharp as yours (they'll keep improving as I decorate more cakes). The thing I really struggle with, though, is trying to figure out how to combine them, like which types of piping techniques look good together on a cake. After watching your video tutorials I can see so many of them work well together. I also struggle with how many decorations to put on my cakes. Your tutorials have shown me that I'm probably making cake decorating more complicated than it needs to be. Thanks for posting and sharing your videos. Ms. Liz is this doable with boiled icing? We don't really have the type of whip topping you're using here in Philippines and I find buttercream to sweet, swiss meringue buttercream on the other hand can't seem to hold the sharp edges(?).

Liz Larson I did! We used to assembly line cakes together. I would frost, he would decorate. I still have trouble with roses, but most other flowers I can do. My favorites to make are daffodils and pansies. Easter was the best time. We decorated a lot of cakes with pussy willows and bunnies. :) I even have his old spatula. It's probably as old as I am. I lost dad a few years ago and soon after, my mom (who also learned to decorate). Lots of memories.

Liz Larson I use Pastry Pride, but I never get a good consistency to decorate flowers. It usually gets runny and ruins my borders. And if I use color, the color drips on the cake a few hours later. What might I be doing wrong when preparing the pastry pride? I usually buy the Pastry Pride the same day I am going to use it. I use a handheld mixer and usually let it thaw a bit, pour onto a chill bowl and begin mixing for over 30 mins. After mixing, the consistency is pretty soft which only helps me to crumb coat the cake. How long do you take to mix the whip that Pastry Pride?

+Robin Graham Hello! Make sure you are using high ratio shortening. Crisco DOES NOT work! It is terrible and will melt right off the cake! Sweetex is a good brand of high ratio shortening. you can find it at a cake decorating supply store or even a restaurant supply store. Make sure you have the air conditioning on when you decorate! Liz Larson was this video all pastry pride? we use it at our bakery for cakes too since u can control how stiff u want it and it just looks smoother than whipped cream and less sweet than buttercream.
Ms. Larson, I need lessons too. I thought roses required a stiff icing. Yours look incredible soft much like whipped cream. Is that just the camera appearance. Are they going to melt if not refrigerated? Lets talk consistency. Its really giving me headaches. Your standard butter cream comes out as medium? what to do for stiff. whats the test for each type? falls off the spoon. plops off the spoon, and throw it off the spoon. best i can describe it.
debra c Hi Debra, this cake is done with Pastry Pride Whip Topping. Another is Rich's bettercream. This hold it's shape well, it's called " shelf stable". The decorating buttercream that I use is also perfect constancy for icing and flowers as well. Here is a video for the decorating buttercream. The trick is High Ratio Shortening. Also in most of my video's I use Pastry Pride Whip Topping or Rich's Bettercream. They can be found at most restaurant supply stores as well as cake decorating supply stores.
Liz Larson was this video all pastry pride? we use it at our bakery for cakes too since u can control how stiff u want it and it just looks smoother than whipped cream and less sweet than buttercream.

Ms. Larson, I need lessons too. I thought roses required a stiff icing. Yours look incredible soft much like whipped cream. Is that just the camera appearance. Are they going to melt if not refrigerated? Lets talk consistency. Its really giving me headaches. Your standard butter cream comes out as medium? what to do for stiff. whats the test for each type? falls off the spoon. plops off the spoon, and throw it off the spoon. best i can describe it.
debra c Hi Debra, this cake is done with Pastry Pride Whip Topping. Another is Rich's bettercream. This hold it's shape well, it's called " shelf stable". The decorating buttercream that I use is also perfect constancy for icing and flowers as well. Here is a video for the decorating buttercream. The trick is High Ratio Shortening.
