oh it's actually quite simple that part. it is quite clear she used buttercream for it so I'm guessing she did a crumble coat then let it set for however long it needed. then added the smooth layer on top with a pallette knife and then let that set. The amount of layers needed depends on when it begins to look smooth. I would say a good time for setting would be 10 minutes in the freezer. Hope this helped a bit

Do you hot your smoother before icing it smooth?I find it smears the color but your cakes look so smooth and the color is just perfect
