Pastry Pride is a Product all by it's self, there is also another product called Riches Bettercream. They are both liquid that gets whipped. The ButterCream Icing recipe In the description section is a Decorating Butter Cream, meaning it will hold the shape of all of your flowers and borders. The Pastry Pride is very good for decorating , but is a much lighter tasting icing.
Ciao, Ele, are you living in Italy? One possibility is stabilized whip cream. You would use Panna in the place of our whipping cream. It uses gelatin powdered sugar and whipcream.

Hi Ele, my family is in Sicily and Milan. I try to visit them every year. I will be in Sicily in May and In Puglia and Calabria in September of next year. Here is the Recipe you need. Another suggestion is to go to your local Pasticeria and ask what kind of crème they use. 4.92 ml unflavored gelatin 19.71 ml cold water 236.59 ml heavy whipping cream (35%) 59.14 ml sifted icing sugar (confectioners sugar)

I love your videos! I have a problem with my icing being too stiff for covering the cakes, then too soft for piping. I have tried several recipes for icing. Some work better for one or the other. Is there one frosting that can do both, or what am I doing wrong when making the icing. I bake for fun and just want to be able to do great cakes for my friends and family.
Stacy Callaway Hi Stacy, here is a good recipe for Decorating Buttercream. The main problem with buttercream in the shortening. I recommend a "high ratio" shortening. You can find this online (amazon) or at a local cake decorating supply store. Happy Decorating!
Ilona Ortelt Hi Illona, you can use any icing that will allow the flower petals to stand up. You just have to try your icing out with this technique and see if it works. I don't know what is in German buttercream, so I can't give you and accurate guess. Let me know if it works. We have lots of viewers in Europe who would be interested. :)

Hi Liz - how do make your shamrocks? I need to mass produce st. patty's cakes etc, this wk, would like to see your take on them. I have seen that some look like they use a rose tip. Mine are not heart shaped leaves, like a true shamrock, as I just use a 8 or 10 tip.
Hi I use a rose tip and make 4 heart shape petals and a stem. It's very fast and can be piped any where. My Daughter Leah uses a figure piping tip to make the heart shape and stem. My technique is very 3d and hers is more flat. When using the star tip make sure to angle your tip up slightly to get a lifted petal. Good luck that sounds like a big job!
