If some of these games are pushing the 5700X 8 core past 50% utilization that means they are using all of the 8 cores and a good bit of the 8 threads. Usage on a 6 core would be in the 70%-80% range unless its an X3D part. Thats to high going forward, get the 8 core, at least match console spec.

What is wrong with people buying nvidia and intel over amd? You get less performance for a higher cost. Rx 6700xt and rx 6700 cheaper and better performing than the 3060ti. For someone building custom builds I completely stopped using nvidia and using intel very limited. Since the rx 5000 series has been out, the amd gpu's have surpassed nvidia and still making the gap bigger by having better performance for the prices. Also amd driver updates bring huge performance boosts from time to time while with nvidia's driver updates you just pray your fps don't drop 90% until next driver update with the current update.

i have the same setup r7 5700x + rx6700xt and Im using ang 165hz 24' 1080p monitor so far the monitor does the job. and one advantage of using it in 1080p rather 1440p is getting higher fps.. though i limit my gpu fps to +2 on the max refresh rate of the monitor to reduce input latency

This is my exact setup. with 32 gb of RAM Here clearly the bottleneck is the GPU, you could try a 6800 XT or even a 6900 with no problem, but I don't need anymore.
I'm currently building this kinda system for a customer, testing have shown that the GPU bottleneck never exceeded 5% and in high CPU demanding games the CPU was the slight bottleneck. In my opinion this is a great combo, it is best suited for 1440p gaming ... that's where this combo shines.

thats a bit overkill for fortnite and minecraft. you could save easily 200 dollars and still get great performance with those titles. since you are going with amd i would recommend a ryzen 5 5500 paired with a rx6600xt card

there are different brands that manufacture the 6700xt mine is from asrock which needs a minimum of 650 watts but other brands such as powercolor are the same gpu but dont draw as much power.
My 5600xt started to hit 100% randomly around 4 months or so ago. Before that, it would hover around 80%. Not sure what happened. Setting PBO in BIOS to "ON" and not "AUTO" seemed to help.

In some games(mid intensive games) i think it can handle around 60-80fps. If your thinking to play only FPS games than you can go for 1440p moniter.

I think you capped the fps to 60 with Elden Ring, the 6700 xt should get more fps than 60 on 1080p
