    I'm really enjoying the inclusion of Kevin in some moments. The idea of most shows is to forget the camera and those behind it but the show is really the amalgamation of three people's work so it's nice to see Kevin peak out from behind the camera for just a moment to enjoy the food and nature and remember that he's there helping make the show.

    Very glad to have this content coming from you directly.
    Spent 10-15 years studying botany, mycology, foraging ID, et cetera -- no one can ever learn it all.
    But, they can learn plenty enough to stay alive.

    I love the beautiful and very real duality Les possesses. He is perfectly at home in nature- rustic and knowledgeable, and can appreciate and share in, at the same time- a zest for the little finer things in life as well.

    There's something about your awesome theme song that's so nostalgic for me, and coupled together with the swainsons thrush at the end really is the cherry on top for me because they live outside my house and all over my neighborhood so they sound like home to me.

    I like the way Paul uses the balsam sprigs like you would use rosemary or thyme or other woody herbs.

      I've been with you on the rainy days. The creepy crawly days.the no fire days because you were too exhausted. The edge of death in Norway. beetlenut and lime days. In India my heart raced when you laid down in the guard tower at night. Thank you for existing basically

    That part around 10 minutes and after regarding location, that's good information to have. Unfortunately many wonderful looking areas that have tempted me greatly for cattail and other wild harvesting are reclaimed land in former industrial corridors (Hello Don Valley Toronto, best trails around!), or near train tracks, etc. Former site contaminants, or the potential for railroads to have sprayed chemicals to suppress weeds/pests mean we have to be careful.

    Another AWESOME video Les & Paul 👍😋👍. One question, When is Paul or YOU . Going to OPEN a Wild Harvest restaurant 🤔. As It WOULD Absolutely Amazon. As the seasons changes , so does the menu 😋. I would drive 100 miles, too taste the culinary delights 😊. I do some foraging ( manly mushrooms) & fishing. Cooking fish & frying mushrooms. Witch is better than taking hot dogs ,eggs, cheese most of the time. Thow living on the bread line, it's manly what I available to me. Catching & cooking fresh fish is a Awesome treat for me.

    Great stuff Mr Chef, mixing in the pine needles , surprised yourself perhaps on the outcome of cattail and Balsam fir finely diced and married together with exquisite ingredients like salmon, agae agae ( check spelling )very interesting..It has just come to mind Chef Paul , rather than you show some apprehension towards what Les may get you to forage, cook or do something special Can you get Les far more technical in the kitchen so balance out the apprehension, Sound good 🖐🤲, T😇Get that Les in a challenge or be your sous Chef 🥂

    Les in Survivorman: Eat whatever the heck he can to stay alive; bugs, slugs, rotting fish, rats, squirrel. Les in Wild Harvest: Eat what gourmet chef prepares for you in utter comfort and plenty. The man is mythic.

    Would Love to see you guys tamper around with what some people call Egyptian Walking onions or walking onions I think the first one may be an "old name" hehe,I found some recently next to abandoned train tracks and the bulbs are like premium shallots and the stalks like giant chives I believe they go by other names but that was the most common name I found for them they grow new reproductive bulbs that form at the top of the stalks get to heavy and they tip over to touch the ground and root themselves again I believe that's why they call them walking onion because they kinda walk

    I do vegetation surveys for work sometimes and thing about plants is you might think you know what species it is but turns out there's 4 species that look almost exactly the same. A little bit of knowlege is dangerous. Cant really mis identify a cattail though

    While it is harmless. Technically garter snakes are venomous as like a honey bee. Only dangerous if you're allergic.

    I would have to respectfully disagree with the statement that you never want to actually taste the salt in a dish. I find that some foods don't taste right unless you can taste the salt in them at least a little bit. Some dishes are super easy to oversalt, and others are usually undersalted. I'm not going to pretend to be a trained chef or anything, but we Southerners are known for making some of the best food in America. Down here, being good at cooking is the expectation for everyone, and it takes a lot for someone to distinguish themselves as being a good cook.
