Crème Pâtissière and Fresh Fruit Tarts

  • Crème pâtissière (pastry cream) is the number 1 must-have in French patisserie. It's the foundation for so many desserts and the best part is that it uses up egg yolks!
    It's basically a thickened custard which can be used for filling eclairs, mille-feuille and other delicious creations. I'm using it to fill some sweet pastry tart cases.

    Crème pâtissière:
    300 ml milk
    50 g caster sugar
    75 g egg yolks
    20 g plain flour
    20 g cornstarch
    1 vanilla pod

    I never knew I had to whisk my creme patisserie! I just use it lumpy and cover it with fruits hehe

    If you make these a few hours ahead of time, would you store at room temperature or in the fridge?

    Hi I wonder how long the creme pat tarts can stay out of the fridge? Can I fill them in the afternoon and keep them in a cool place through a dinner party (6 hours or so) or do they need to be refrigerated? Thanks!

      It really depends how cool your environment is but wouldn't recommend more than 2-3 hours out the fridge!
