I made strawberry tarts using a thick strawberry yoghurt as the filling and they were a really lovely change from the usual vanilla cream filling. I've never made my own strawberry sauce so I have to try yours, it sounds yummy.
Oh these look so yummy, I love strawberry tarts, my daughter spent the morning baking and made biscoff cupcakes and chocolate chip cookies they were so tasty but next week I will be buying her the ingredients to make these thanks for the recipe Cheryl X

We moved to Cheshire when I was 9, that’s the first time I had them, from Sayers, a local North West chain of bakers, their strawberry tarts had no pastry cream in them, they were just a whole strawberry in the jelly and topped with fresh cream...my mouth is watering again thinking about them. When I moved south over twenty years ago I discovered that the strawberry tarts had pastry cream in them, and I thought it was something peculiar to the south, now I’m wondering if the type of tarts that Sayers made were just peculiar to the north west!
I was wondering if you can freeze these, I know that creme patisserie can only freeze when made with flour, but have you experienced freezing these??...they look great by the way...👍👍🇬🇧 Is that an extra special milk?, as it looks like cream...lol.. Just making these atm..👍

if you thicken the strawberry sauce with arrowroot it will not go cloudy and stay clear
Instead of vanilla bean paste, can you use vanilla extract?

In what way are these tarts scottish and not just tarts? Everything has to have scottish in front of it i think most people know where youre from.
