- People who don't love custard are just plain WEIRD! I love the stuff. So Creme Patissiere, or Pastry Cream, is like the daddy of the custard world. And it's a really handy recipe to know if you want a simple, quick and tasty filling for your tarts, eclairs or even cupcakes. Here's Dane to show you how it's done...
Recipe -
675ml milk
2 tsp vanilla extract
135g caster sugar
40 cornflour
2 lg eggs + 2 egg yolks

Oh my word! Ive just made this, in readiness for profiteroles tomorrow. Its gorgeous, and sweetness is perfect. I used vanilla bean paste.
Seeing everybody working on their cakes in the background totally reminds me of my first job in a cake shop back during school time! Loved it! I can literally smell it in my mind. 🤗Maybe I should have sticked with it. Till today I enjoy baking a lot but I just don‘t have the time now. 🤷♀️

This recipe turned out great. Once it starts boiling I cooked for 3-4 min while whisking to cook off corn starch flavor. Really good! I used to make banana pudding!

In Italy we put just a piece of lemon peel (without any of the white bit from the lemon skin) when we boil the milk. Sooooo good.

Can you use normal plain (all purpose) or 00 if you don’t have cornstarch?

Can you mix this with whipped cream? In Belgium, you have fruit tarts that are filled with pudding/custard, which is yellow and what this looks like and then there is what I know as creme patissiere which is much lighter in color, less intense in flavour and just melts in your mouth (perfect with strawberries on top). It's the second one I was expecting here.
Do you have to get the eggs and sugar to a ribbon stage, or just until its a little paler and homogenous?

It's cornflour but may be different meaning in US. It is the fine white powder that you want.
I just cook it together from cold, adding the hot milk to the eggs is such a faff

Dane, when you say corn flour, is that the same as corn starch?
Hi Connie, corn starch & corn flour are the same thing, very fine white flour for thickening sauces etc.

ua-cam.com/video/C3pAgB7pync/v-deo.html is a good one. I add a little extra sugar, and replace the cocoa powder with ordinary flour for a vanilla version.
Can you use this as a filling for macarons?
It might be a bit too runny. You could make a ring of buttercream and then put this in the middle. Or you can use this to make creme mousseline which is like a buttercream made with creme pat. Check my Boston Cream Pie cupcake vid for the recipe

Just keep whisking and strain it once you're done and you'll be fine
Just make sure you pour in the milk slowly. You'll be fine. Don't fret.

@@johnwheeler1450 Exactly. And the key to that is to slowly pour the milk in. I remember when I first attempted custard I added a quarter cup at a time slowly streaming it in until I reached a full cup than I poured the rest of the milk in and proceeded with the continuous whisking on stovetop.
John Wheeler tempering is to gradually introduce something so it doesn’t “shock” the receiver. The eggs in this case. I usually take half a cup from the pan of milk and pour milk from the cup slowly and stir really fast. Then just add what’s left from the pan bit by bit. Always a worry until you can trust the method. Good luck 😉
