It worked for me when I squeezed the courgette in a tea towel to get lots of water out before I put it in the mix and used 1 courgette and not 2! Delicious

I made these and the center was soggy. I had left over batter, so I fried it like a pancake. I topped it with hummus and pico de gallo. Sooo good this way!

I read on Ella's Instagram that the amount of red pepper is key, that's why it asks for exactly 90gr. The corgette doesn't seem to make such a difference. Mine came soggy too and I simply diced 1 red pepper without weighting it so I'm assuming that's the problem...
I made these, however I found the amount of bicarbonate of soda overwhelming. Can you reduce the amount of it in the recipe as there is quite a lot and leaves a horrid taste in your mouth.

Important information to leave out. Anyway, I finished making the muffins and found the cumin flavor far too strong. Thumbs down.

I didn't have a muffin case so just put the mixture into a banana loaf tin - came out fine!

Unhealthy due to oil. Fat- plant based or animal is still fat and does the damage to the cardiovascular health.
Olive oil's composition rich in monounsaturated fats gives it the ability to reduce the risk of heart disease
Perhaps try coconut oil??
