Hi Ella, I tried your recipe with alight variations bases on readily available ingredients in my kitchen. Used, all purpose flour with little rolled oats and sunflower oil. Muffins came superbly delicious and my 3 year old loved it. Thanks for sharing the yum recipe.
These were so good! I used 1/2 organic white flour and 1/2 spelt. Also, this was my first time using coconut sugar. I loved it! Thank you for this recipe.

Made them with whole meal spelt flour , used Almond Milk , turned out delicious- kids approved as well! yes I also agree that 200 g sugar is a bit too much and not healthy ,so next time will go with extra ripe bananas and less sugar

My changes: - 200 g plain flour + 30 g grounded hazelnuts - 50 g brown sugar (I don't like it much sweet, so maybe 80-100 g would be received better by others ;)) - 170° C (circulating air), 25 min In my opinion, just the sweetness of ripe bananas is perfectly fine and tastes better than just sweetness of sugar. I absolutely love these muffins~ Next time I'll use even further ripened bananas (to the point that they wouldn't last any longer) and reduce the sugar down to 30 g.
Hello, I don't like too sweet either and would like to reduce the sugar too. But I am afraid the batter would be too dry because there is not much liquid ingredients in this recipe already. Can I ask when you used 50g sugar or less, were the muffins still moist and fluffy? Thanks.
She said in the video that buckwheat, brown rice and coconut flour don't work in this recipe and suggested plain white gluten-free flour! I'm tempted to try it with oat flour and see what happens. Hope this helps :)
Magdalena Thanks. I can’t watch videos like this (when there’s background music over someone speaking) due to chronic illness/hypersensitivity/sensory issues. My cognitive dysfunction can’t handle subtitles either, so I can’t even turn off the audio and watch with subtitles. I think I’m still going to experiment with brown rice flour, maybe with a bit of tapioca starch in there too.
@@davidthescottishvegan I'd rather use brown rice flour too, however, Ella mentioned that it does not work in this recipe so it's better to find other less processed alternatives. But yes, if you can tolerate gluten then wholemeal wheat flour is an amazing alternative!
I baked these today... I used oat milk instead of coconut, and 130 g brown sugar instead of 200g, and they turned out perfect, I love this recipe!

Not at all! Even a few days later in an air tight pyrex they are still fluffy and perfect.
Yes, oat flour is nice, but sometimes mushy, you need to know proportions. I made banana muffins with out flour, they were moist and nice texture.

Alice of course! Why not? I do that all the time. You will just (maybe) need to adjust the baking time, depending on the size/shape of your tray.

Plain white flour is more porcessed so I would try brown rice flour or because gluten doesn't effect me I would use whole meal wheat flour.

Uncooked flour isn’t foodsafe. It’s safer not to snack on the raw mix and instead cook all of the mix.
