  • These vegan quinoa and black bean burgers are a staple in our house, perfect for veggie burgers or used as a delicious patty with a salad. The sautéed red onion and smoked paprika give them loads of flavour. You'll find them on p.132 of The Plant-Based Cookbook and you'll need the below to make them...
    Makes 6-8 burgers
    - 1 red onion
    - 2 garlic cloves
    - 1⁄2 teaspoon cayenne pepper
    - 1 teaspoon smoked paprika
    - 1 teaspoon chilli powder
    - 150g chestnut mushrooms
    - 125g quinoa
    - 1 × 400g tin of black beans
    - 1 heaped tablespoon plain flour
    - 1 teaspoon arrowroot
    - Salt and pepper

    This is SUCH a great recipe! I used chickpeas instead of the black beans yesterday and they turned out great. I also froze a few patties, I hope they'll be ok later on. Next time I'll also add some nuts for crunch :)

    A handful of crushed pecans or walnuts could be added to give the patties a bit of a crunch

    yummy I'll definitely make these !! Something I would love to see you make is a vegan mug cake.. so many of the recipes I see online arent exactly healthy so I'd love to see you make one of those :)

    Nice video. Thanks for the tip in cooling them I wasn't doing that. I prefer red quinoa because its not as mushy as the white.

    I couldn’t mould them into patties as the mixture was to wet. So I had to add more more flour( it was rice flour) and more arrow root. Still I need to fry them ,hope they don’t crumble

      I'd freeze the before, we always do it that way. You can pan dry then after 😊

      @@just_as_is I sometimes use a premade mix of ready made quinoa & lentils, but leftover (cooked)rice or puy lentils works great too with a little fresh garlic/powder and also black bean burgers are often made with cumin powder (a teaspooon or two to taste). I sometimes squeeze in Bang Bang sauce ( a chilli and garlic sauce) into the veggie burger mix instead of chilli powder as this gives it a little kick and seems to work well.

    I would love to make these but i cannot have flour. Could I use almond flour or could you suggest another alternative?

      I have often used almond flour and occassionally coconut flour to bring veggue burgers /patties together. Coconut flour is an interesting one to use as you need very small amounts (maybe 50g/so?) as it is very absorbent and therefore absorbs a lot of the moisture (sometimes a problem with some burgers /patties especially those that require grated carrot/courgette for example. If using these types of veg - carrot , courgette/potato all contain lots of moisture. If using these partocular types of veg I would suggest adding a pinch of salt, leave this then to drain over a fine-mesh colander (place a bowl undernearh to catch the drips) and squeeze out well (some people like to use a kitchen towel/clean dish cloth/cheesecloth etc, but it's fine squeezing out by hand) after 10-15 minutes, that way your veg fritters/patties actually fry and get crisp and you don't end up with a soggy mess (not suggesting this recipe is wrong, just my experience with other types of fritters/patties or burgers using certain vegetables) that's hard to handle ! Hope that helps.

      I would add some cooked green lentils in place of the mushrooms. They don't have the same texture but if you cook them until soft, that shouldn't be a problem. If you're after a similar texture then maybe add some medium-firm tofu? Or perhaps use some dehydrated soya mince, I would add some soy sauce or tamari to the water in which you're hydrating the mince to give it a savoury mushroomy flavour. Hope this helped a little! :)

      Try puy lentils (cooked), or leftover rice works well as do other beans such as butter beans or pinto beans (whole, not refried !). Make sure these are precooked. We use leftover rice a lot as it gives burgers a nice texture and seems to absorb some of the moisture so the mixture is less soggy. When I am stuck without certain ingredients I just add some more almond flour or a tablespoon or so of coconut flour. Several tablespoons of breadcrumbs (panko crumbs are handy for this so we always have some in our cupboard, but good old-fashioned toasted bread crumbled works fine as well as mixing up bread slices in a food processor) can also be used and absorbs some moisture so your burgers have a less soggy texture before frying /baking .

      I think the only difference will be the texture. Frying is going to make it really crispy on the outside I’d imagine.
