Endive mash is eaten in the cold winter and usually served with meatballs.
Enjoy the recipes!
Raw endive mash
Ingredients:
Potatoes, endive cabbage, milk, mustard, butter, ground black pepper, salt, ground nutmeg, vinegar, bacon (or pork belly).
Directions (for 4 servings):
cooking time: 40 minutes
1. Cut 250 grams (about ½ pound) of bacon into small pieces and cook until crispy. Set aside.
2. Cut a whole bunch of endive (400-500 grams: 1 pound) into thin strips. Wash, drain, and set aside.
3. Boil water in a large pot for the potatoes.
4. Peel 1 kg (2.2 pounds) of potatoes. Clean them, cut into large chunks, and put them into boiling water until cooked.
5. Drain and mash the potatoes. Add ½ cup of milk little by little to make a smooth puree.
6. Add the bacon, 1 tbs mustard, 2 tbs butter, 1 ts ground nutmeg, 1 ts ground black pepper, and ¼ ts salt, and mix it well.
7. Add the shredded endive bit by bit to allow it to shrink a little as you go.
8. Add 1-2 ts vinegar and mix it well.
Serve with gravy and a meatball.
Dutch meatballs
Ingredients:
Ground beef and pork, mustard, ketjap manis, salt, ground black pepper, ground nutmeg, eggs, bread crumbs, butter
Directions (for 4 servings):
cooking time: 40 minutes
1. Mix these ingredients in a bowl by hand until well combined and sticky:
500 grams of ground beef and pork mix, 2 tbs mustard, 2 tbs ketjap manis, ¼ ts salt, ½ ts ground black pepper, 1 ts ground nutmeg, ⅓ cup bread crumbs, and 2 eggs.
*tip: You can replace 2 tbs ketjap manis with 2 tbs soy sauce and ½ tbs brown sugar
2. Divide the mixture into 4 large balls.
3. Heat up a covered pot or pan with over medium high heat.
4. Add ¼ cup butter and wait until it turns brown.
5. Cook the meatballs until all sides are golden brown.
6. Turn down the heat and simmer for about 25-30 minutes. Flip occasionally until thoroughly cooked.
7. Take the meatballs out of the pot out and set aside.
8. Add ¼ cup water to the pot and cook over low heat to make gravy. You can add 1 ts flour to make it sticky.
Dear Maangchi,
You are a pearl on UA-cam.
Sure, you are a great cook, but you are also blessed with a good vibe.
Love all your video's.
Greetings from Amsterdam.
I just woke up and read your comment. You already made my day! Thank you so much! You are awesome!
Maangchi -- I met you a couple of years ago at a UA-cam meet up in NYC. I am now in Amsterdam staying with a friend and I made this recipe for my friends. They were very impressed! It was delicious!! :)
Best,
Rachel
9:12 "we need one final touch" "SESAME OIL!!" LOLOL
liceous I love this so much 😂 I love you sesami oil!!!😍
ketjap manis is originally from indonesia and is called kecap main :D its used in dutch cooking cause dutch has ever collonize indonesia. i was actually quite shocked to see that in reiner's dish
This is my favorite collaboration you've done! You two had such fun together.
Thank you for your comment. I can see a different viewpoint through your comment which is interesting.
I don't make meatballs often but even since I learned this from Reinier, I always use this method (grilled it with butter) All those who taste it, they love it.
hiii mangchi ... I am from India... and I don't eat nonveg... but I simply love love love watching you cooking ... I love the way you express your food , .... and in this video your sesame oil funny scene was awsum.... I love you ... tc !!! God bless you!! Bye!!!!
I love that you are spreading other cultures' foods Maangchi! Please continue!
@macherielle lol, no that's not true. Reinier is like my younger brother. I love him because he is such a passionate cook. Focus on food, buddy! : )
yay, great news! Reinier will be very happy to hear this!
This is very authentic! Usually I also put chili flakes in the meatballs.
I love how you not only share food of your own country but also try dishes of other cultures!! i don't eat meat but i will definitely try that potato mash!! it looks so good with the endive!
I am Dutch but live in the United States. I went to visit my Oma and Opa in November and she made something similar to this. She use kale instead of endive (so the kale was cooked a bit first) and since I don't eat bacon, a bit of butter instead of bacon. We out some gravy in the center as well, it was soooo good.
Hello hello everybody, thanks a lot for your wonderful comments! The written recipe is posted on my website just now. Cheers!
This is comfort food for me.
😂🤣😂 love this episode. So much joy and humor. 😍
What I like most is the Maangchi she does not need to eat .... fills the mouth with taste ... and it gives me an urge to eat even more! Missing you came here in Brazil doing some typical food ... I guarantee that some very spicy!
My Oma used to make this with Awesome meatballs, when I was younger. Thanks so much for sharing! It looks the same as she made it. Mmmm lekker!
Dear Maangchi, If you like, I will share a really good Dutch meat dish for you to try called "draadjesvlees". My grandmother taught me.It is a Dutch stew with beef and we serve this with rice or potatoes.....
Check out the list of grocery stores in the Netherlands. When you visit my website, you will see grocery store list in the cooking section. I see 9 Korean grocery stores in the Netherlands right now.
Yes we did! Precious memories :)
maangchi is so adorable. its like watching a comedy/cooking show. i love the adlibs and the text popping out are funny! great food, great show; congratulations!
Dat bloopers tho😂😂😂 You guys are so cute.....
I really love your show! Lots of happy moments! Lots of laughter!
The potato is a'boiling and the bacon is a'chopped! I just love Maanchis accent. One could make a poem out of this.
aigo everybody, thank you so much for your nice and funny comments! "sesme Oeeel" : )
i made this wuth chinese cabbage once to try it out as the andijvie was not in season and i had a stampot craving
turned out yummy
i would slice it as thinly as possible though because it is slightly tougher than andijvie and does not get cooked
we usually eat stuff like this on cold wintery days
there are more varietes you can do it with saurkraut or kale it is very healthy food
Thank you! We had so much fun! : )
As a comment from Dutch person (who learnt from mom, who learnt from grandma, and so on): in the traditional Dutch way I would prepare this, it would never have ketjap manis or mustard as part of the ingredients. The butter used would be normal margarine for cooking. Quite a bit different from normal butter. Also, when making the mash, used warmed up milk to make the mash much smoother instead of some glue-like substance.
She’s so adorable!
Such memories, we had our potatoes with curly cabbage, spinach, or sauerkraut, a little well in the middle for the jus.
it's endive all right, if you can't find it at all you can try leek. Cut them in rings and stir fry them for a few minutes and add them to the mashed potatoes. Then it's called Stamppot Prei.
You can add more bread crumb to make it more firm, also make sure they are compact so they don't have much air inside them.
Lekker~~~!!!!
Eet smakelijk~!!!
As a dutch person looking trough this channel for Kimchi recipies, finding this video made me super excited! :D I love this!
Bloppers were so funny.
Really enjoyed watching this episode Maangchi!
Try this variation:
Use 'postelein' or purslane (Portulaca oleracea)
in stead of 'andijvie'(Cichorium endivia).
Planning to try out this recipe with my friends.
I can't wait to have these big, meaty, butter-drenched, Dutch balls in my mouth.
Really nice to see on of our native dishes being translated and appreciated! We just had this for supper today, and it's one of our family's favourites! Everyone has thei're family's favourite recipies concerning the meatballs: mine are made with smothered echalots, Indian curry and Indonesian sambal inside, we like a little 'cick' to our dishes!
@trevikok Indeed! Thank you very much!
Awweee, she is too adorable!! I love her :) ♥♥
i couldnt stop staring at the egg shell on the bowl! good thing maangchi caught it! lol
"Sesame oil?" LOL Maangchi!
Great video :)
I found this while looking for a stamppot video. I've always had a soft spot in my heart for the Netherlands and now I got one for you too, Maangchi!
I love andijvie stamppot. Your video put a smile on my face. It looks like a fun party.
Hi hun!! :)
Thanks to you I got rid of my Dutch kitchen and take your recipes for the change wich I love.
Thanks for letting us enjoy your Korean Kitchen.
I loved when they all ate. People from different parts of the world, completely different cultures, exchanging cuisines, eating together, having a good time. Love it!
This food looks really good, especially the green/potato mixture.
I need to know, though.... what's this song? I really like it. :)
@Maangchi & Reinier - now I have to find a Dutch restaurant in Sydney ... I have Dutch food on the brain and I need to try more traditional deliciousness ASAP!! Greetings from Australia!! xx
Happy Lunar New Year from Korea, Maangchi! I hope you had a nice holiday wherever in the world you celebrated it.
I was freaking out when I saw the eggshell stuck on the bowl. I was like OMG OMG. And then you finally picked it out. Thank goodness for Maangchi!
Absolutely beautiful sharing of food and cultures! Maangchi and Reinier, you both did a wonderful job XD. I am soooo hungry now, lol!
I had a LAN party with my friends playing Civilization 4 and we each chose our civilization in advance so I could cook a dish for each one! Someone chose the Dutch and I made this for him! It was one of the favourites :)
Thanks!
"ketjap manis".......... how cool that it's in a traditional dutch recipe! :D
beautiful video - love the warmth of the people - so nice to experience and the food looked delicious
@jykellylee yay! yes,first! Thank you!!!
The place , the food all are so good
The only endive I've ever seen in Canada are the little boats. I would love to try this! That stuff you used looked like lettuce. This video is so cute!
You two are so cute and funny! Love the oufits and he has a very nice kitchen like it's from Ikea!
@hortihorteae that's actually the old Indonesian spelling.. now it's just kecap.. =p. It's really amazing how easy it is to get this and many other instant seasoning for nasi goreng, bami (bakmi / noodle) goreng, satay, and the array of sambals available at any supermarket in the Netherlands, even more than what I've seen in S'pore or even Jakarta supermarkets.. lol.
Omg I love butter it fills the void in my heart
...lol
but this seriously looks soooooooo yummy!!!!!
@Dutchguycooking echt een super leuk idee Reinier, met die traditionele kleding :)
@Maangchi It's funny, we usually put the sauce and the meatball in the crater, haha. Guess we can't resist the temptation ;)

Hey he also makes a vulcano, my dad also used to do that with other typical Dutch mashes. Last time I had Andijvie Stampot it was summer ;) I really like your recipes, it always makes me hungry.
WHAO! Those meatballs look DELICIOUS! Just knowing that it's cooked in butter... omg....

you must be having so much fun maangchi!
omg maangchi ❤️❤️ you came to my country! please come again!! 😁 😁
Very cool intro! Thanks for the cool cooking video!
Great video!! In the US & Canada it's usually sold as "curly endive."
@dothejas i'm glad she noticed! It would be a wrong kinda crunch!
great!
Thanks for the great travel videos. Looks like you had a great time. WOW, I didn't realise Dutch food was so heavy, I suppose in colder climes you need good 'stick to your ribs' food. Looks very delicious & hearty. Chloe, in the UK.
I love the song!
@ashemedai I think that perhaps mustard or ketjap is a regional preference. As for the margarine, certainly butter was the original ingredient.
(I've only tried margarine twice, and both times thought it tasted like a stinky refrigerator. I just don't understand why someone would use it.)
@bobitsuki Thanks a lot!
I love this!!! You are the cutest youtuber and your subscribers are the sweetest community on youtube!
LOL!
"how do you eat?? i want to put the meatball inside this crater"
I WANTED IT IN THE CRATER TOO ^o^
These meatballs look amazing and the mash is a great side!
Aww it's so cute you're so small ! 😱
Maangchi and Reinier, I just made this dish! Its amazing! Love the use of nutmeg in the dish...and i have put my Christmas tree up! Dank u wel!
This is seriously my favorite food. So nice to see you making Dutch food! :3
Did you guys stop by one of those funny coffee houes in Amsterdam? Great Job !!!
You two have a great rapport and loved the video. Your Bloopers made me smile and laugh, but the food made me salivate. I will definitely try it! Thanks for sharing the recipe. Cute skit too! :D
Looks like you guys had a lot of fun! I especially enjoyed the footage!!!
Woah i live in Netherland, and i never expected you would come all the way to this small country :'D
Yup, we did! :)
LOL this looks just great. I will try and make this myself and eventually make a video about it, although mine can never be as cute as yours! Thanks for sharing this was great fun.
@teecuppit3a You are better off with lean ground beef. And you can add milk to the ground beef mixture and just skip the ketjap manis. What he's making is not a traditional dutch meatball but more of a "modern" interpretation of the dutch meatball.
@macherielle Thank you! You missed me? Cute! I'll start posting more soon :)
she's so funny , i like the way she's speaking english with korean accent
OMG YOU WERE IN THE NETHERLANDS!! THAT'S AWESOME!!
Greetings from Amsterdam! :D
I've been to Holland! The endive mash and meatballs look so delicious :)
@bobitsuki
My feelings exactly! I became an instant fan, and cooked the meal today! I hope Maangchi you like my video response.
YES!
This is how we do it.
