I have a concern: is the cornstarch used cooked or raw? I know cornstarch isn't supposed to be eaten raw, but mochis usually call for cornstarch and I just wonder if I can use it raw or was there any cooking method used before adding to the mochi? Maybe a silly question but answers are appreciated!
Just from googling, I’d think the small amount of raw cornstarch here is pretty unlikely to cause an issue. Raw cornstarch is fairly common in candy making to keep candies from sticking together, but the amount of it consumed with the candy (or these mochi) is very minimal. The main issues with eating it raw are in large amounts (due to pica, a mental disorder), or the possibility of bacterial contamination. The second one is really quite rare, as producers of it are careful about this, so just be sure your cornstarch isn’t old or expired and that you don’t dip into the container with a dirty spoon.
