My mam stopped using part water and uses all milk and she also started occasionally some sautéed onions or shallots in the pot. My Da was making real money. Tip flour and milk start adding water in slowly if you don’t have the stick blender. Add some if the hot water/milk to temper the flour mix.

Growing up in West Virginia we call this creamed new potatoes. Always served with cornbread or cornbread fritters.
