    Sigh. You can cook more Lao food than me. It's hard learning from a mom who never tells you exactly how to make things and takes over halfway through because the flavour is just not good enough for her. And now that she's older and can't be bothered to cook all this yummy food, I rarely eat the way I used to growing up lol. Now I have to rely on videos like yours, so thank you! 🙏🤗

      It’s tough out there!! I struggle still to learn new recipes. I want them to taste like how the OG Lao ladies cook them! And that’s hard. I noticed that the authentic recipe videos were not in English… and most English videos just didn’t taste like moms. So I’m trying to bridge that gap for English speakers who want old school recipes and taste. And I hope I’m succeeding in that. Thank you for supporting ❤️❤️❤️

    I don’t use onion I use shallots and dill leaves really give flavorful and herbal taste. Looks good!👍

    Recipe looks and sounds great, one bit of advice (I make a lot of sausage) invest in a separate sausage stuffer, it will save you time and wear and tear on your grinder.

    Absolutely amazing! I made a Thai version (Sai Ua) without casings last year bc I couldn’t find any… I gotta try your version as well!!

      Casing can be hard to find here too. My husband picked it up from a local farmer. I like patties just so much!

I am married to a Caucasian woman for Over 16 years now, she can't cook nothing Laos. I cook all the food for us. Our son love's it. Anyway I just wanted to know Thank you.

      Hello! Welcome to my channel! I really enjoy cooking so I’ve sought out opportunities to learn from family, friends, online, etc. I make something until I get it right. And call my mother in law if I need help. I can usually explain how it tastes over the phone and she knows what’s missing haha.

      You can use a plastic water bottle to stuff sausage. Just cut it in half, place the casing on the opening you’d drink from, then push the meat through the other side. Hope this helps.

    I don't know how I end up here but I sure am glad! I know it's gonna be good just by looking at the list of ingredients. Everything is easily available in my country except for padeak. How different is it from fish sauce? Are there any substitutes for it?

      You could use fish sauce instead. Another option is anchovy sauce.

    I have one question,how about 48 hours fermentation?not need to fermentation?

      This is a great question. Fermentation can enhance the flavor and is safe if done properly. I, however, do not ferment as it adds a lot of time to the process. I usually make sausage in bulk once a year with family and friends. We aim to complete the process in a single day.

    How do you keep the sausage casing from blowing up while cooking it?

      My sausage doesn’t split during cooking. Perhaps those that do split are overstuffed. I’d recommend poking holes in the casing with a toothpick before cooking. This should allow some of the pressure to release. Hope this helps.
