Digital Foundry recently released a video saying older Xbox ones are not updating. Wether this includes the One S is beyond me but maybe this could be the problem?
I find it AB SO LU TE LY hilarious just how incompetent MS' software engineers can be sometimes. Here they are, struggling to update a console this new, meanwhile, NASA's scientist engineers updated deep space probes that broke through the termination shock barrier into interstellar space and have been out there for decades upon decades. That's just a special level of lame, not being savvy and smart enough to make a proper update protocol as your core. Even freaking Nokia with Symbian had figured that out. Unreal. I would be ashamed to be this bad at my job - because this isn't just one issue updating. There's been several across almost all of the boxes so far.
Hey Joey, I could be completely off the mark but my intuition is telling me that the issue you’re having with the second Xbox is related to the date and time issue that happened after 2010. I don’t know if you remember I can’t remember what year but because the calendar doesn’t line up, neither does the certificates causing it not to work… there’s another issue like this coming up in 2038, it’s an interesting story and it was predicted really early on. As far as the fix goes in not sure if there’s a way to manually set the date and time then hopefully it’ll get a valid certificate from the internet & start working. The best way I can explain is if you were to set the wrong date and time on your phone things start breaking… same on the computer & if the date and time is correct everything works as normal (it might cause you to login to some things again) . I hope this helps
Great vid as always! Just wondering whether you could try using a USB to Ethernet adapter to try get it to update, bypassing and ruling out the onboard NIC? That's if the Xbox would recognise the adapter.

That's something you should consult your manual for. There are generally universal symbols but some multimeter may be slightly different or have the same setting for multiple modes which then require you to push a button or something. As he mentions, continuity, diode mode and resistance mode you should check your manual to find where these correlate on your unit.
try updating with the original hard drive with an online update as the firmware of the Xbox wont recognise he new way of doing the Xbox hdd swap the old way was longer and more manual Andrew Paul done a video on it years ago if that works after the update and you on the newest dashboard then you can do the new way of swapping out the hdd to an 1tb
In theory, the device compatibility when in comes to Wi-Fi has to be in sync. Maybe try to match the time and date and check again for Wi-Fi. (sounds so dumb and simple but most of the time devices that cannot connect are just not in sync)

PLEASE Try that second xbox again, there was bug by microsoft which was fixed!
The second xbox one is ok, there is a bug in the latest xbox one update and you can't update if the current version is from 2018
But how do you fix that?

The second one could maybe be faulty onboard 8GB eMMC, which can lock itself to be read-only (at least it can on xbox 360)
swap out the wifi/front board, an iffy wifi/BT module can pull the uart down

Earlier Xbox ones have updating problem recently, mainly reported were 1st gen models.
Failing the new update from Microsoft, I would be checking/swapping the HDD controller(s).
