Here's a materials list based on watching the full video several times. The only part I didn't include was the Details chapter, starting @52:37 but should be able to get you thru 95% of the build while in survival.

This is the first castle build I've seen that actually has a lot of basis in real-world functionality. I love what you did using wall blocks in the crenelations to make it look like there were actual machicolations!
Thank you for this amazing build. I just started playing in survival with friends and I'm planning on making this my castle on an island. I literally have no words to describe how awesome and perfect this castle is! Not that huge, but still big enough to show the power of the local landlord! It could be even incorporated into a town!
I am definitely going to build this castle, or at least try to mimic it as close as possible (though I highly doubt that I will be able to make it as good as yours, so better just follow the tutorial). However, I'm going to make mine out of deepslate and blackstone instead of regular stone.

The castle is on the small side but the effort and attention to detail is just awesome. (PS: I always end up using some of your building techniques because I just love the way you build. In order to get the invisible item frame, that's what i did: Copy and paste Jin's command, delete the first word "minecraft:", and it will give u in ur inventory a new item frame, which will be invisible once placed.

Good lord minecraft has improoved since 2013. Good build, I was also into this kind of art back in the day.
This building has all that a real castle must have!. I'm already building it in survival!, my head is about to explode but it will be worth the effort, oh! I also add an escape tunnel from the storage room that looks like a sewer, the tunnel heads to the nearest beach, and something else, I build it in the precise site of a pillager tower, I'm always surrounded by enemies, the defense became real, lot of fun!!!!

I like the very detailed design, but wanted to point out for anyone else that plays on Bedrock version, that the entrance to the keep doesn't work - at least you won't be able to get thru as is shown.
@25:35 you won't be able to use all 9 fences here as the walls below will block the space in between both.
@26:28 the walls below also prevent you from getting thru the door with the trapdoor above the door.
A solution I've found is to replace the 6 walls @25:01 with cobblestone lower slabs or stairs.

For the chimney you can place 2 campfires below the brick walls and make spruce trapdoors fully around them. So you actually have a smoking chimney
