most Filipino food is intended to be eaten with rice, which is why the dishes on their own are seasoned strongly. The rice balance or softens the strong flavors.
Tip: if the dish is too salty/sour/sweet/spicy, just add more rice to your spoon to water down the strong flavor.
Most Filipino food/ ulam is accompanied by sauce/sawsawan to enjoy . Kare-kare = bagoong, Sinigang = patis w chili , Crispy Pata = spiced vinegar w soysauce, onions, Lechon Kawali = Mang Tomas liver sauce.

The karekare we cook does not use peanut butter. We use coconut milk and serve it with saute salty bagoong.
But isn’t that Bicol Express? If it’s shrimp paste only then it’s Binagoongan.

Every Filipino dish has its own sawsawan(dipping sauce). To experience the true Filipino gastronomic delight don't forget the sawsawan.
The way how we enjoy or how sinigang should be enjoyed is to drench the rice with sinigang soup and eat it with the sinigang meat and veggies and sinigang is one of those foods that remove greasyness from all of the other oily dishes. 🥰

You have to dip the pata into the prepared sauce to make it taste better.
Yes it’s supposed to be dipped in its sauce which is a spiced vinegar & soy sauce mixed with lots of chopped red onions.

Tortang talong or Lumpiang Toge/gulay is probably the easiest way to make him eat vegetable and like it? maybe?
Many times if filipino food comes bland its intentionally done that way for the person eating season the dish to his liking, this is common to filipino food, thats the very reason we have sawsawan or dipping sauces and condiments on the table with our food

If you want to try traditional Filipino lechon go La Loma Quezon city it is the lechon place in Manila. And I suggest you to visit Mang Tomas lechon.

They are Spanish they love rice. They can’t survive without rice either. My husband is puertorican and they love pastales something wrapped with banana leaf. Just enjoy the food amigo.

correct me if i’m wrong, but I think the tamarindo that the latinos normally consume is the brown one (ripe). But the tamarindo used in sinigang is green (unripe) which is very sour.
our sinigang here in Laguna uses brown tamarind too

Kare kare should never be introduced to foreigners that's specifically an acquired taste. Kaldereta,bistek,adobo are much better options. Peanut butter soup with shrimp paste is extremely odd for foreigners.
