    I followed your instructions and it was actually really good! I've never cooked a tasty tuna steak (it's always kind of... subpar), but these spices made them taste great. I will definitely be making this again in the future.

    I made this for dinner tonight and it is AMAZING!!! I usually eat my tuna in poke or sashimi, or lightly floured, seasoned and cooked well done (the way my grandma used to make it for me when I was little), I have tried many seared recipes and it just tastes so bland to me. Learning how to caramelize it with the rub elevates the flavor element so much! I want to make this every night it’s so easy!

    Done this before, it's really good and pretty healthy too.
    I drizzled a touch of soy sauce & olive oil mixture to finish it off...trust me its soo juicy...

    Just made a lovely variation of the pan cooked method using the following-
    Salt ground pepper basil cilantro cayenne and garlic for the rub
    Then I cooked each side for about 1:30 minutes in avocado oil with a splash of patron tequila
    Finally garnished with fresh basil leaves and lemon juice
    No cap one of the best pieces of fish I’ve ever tasted

    I just made this (Corriander, Fennel, Salt, Pepper) + I added Sesame seeds - it was incredible. Added the olive oil after I took it off to keep it moist + fresh lemon juice - my daughter absolutely loved it - and she 'hates' fish. Thank you for this.

    I made a parsley + capers + lemon zest sauce with olive oil, lemon juice salt and pepper, and I put this sauce over the cooked tuna, and basted it with the extra oil, it was out of this world delicious.

    I have used this rub recipe repeatedly. It is so delicious! My husband is a sportfisherman, so all ours is line caught and fresh fresh fresh.... I grow coriander (cilantro) and fennel in my little backyard. Never thought of using it on the tuna. Thank you @Jamie Oliver

    I never cared much for fresh tuna until I used this recipe. Now I love it. For me, what's important is going heavy on the spice rub, especially the pepper. That just gives it such a burst of flavors, that meld perfectly with the tuna. And of course, don't overcook. Those complaining that the tuna is raw- if you cook it all the way through, it gets dry and tough. I've eaten it this way dozens of times and never been made ill. Also, what are all the complaints about olive oil for? I find that last splash of olive oil helps marry all the flavors together, and creates a sauce of sorts that is just delicious.

    This looks awesome! I worry about mercury, so I don't eat much tuna anyway, but last night I tried tuna steak for the second time in my life, and I've really been missing out! The first time, it was so overcooked that it was like eating shoe leather, and I guess I just assumed that this was how tuna was when it was cooked. Since then, unless I was having it as Sushi, I've avoided it. Last night, though, I decided to give it another try, and the restaurant I ordered it from cooked it RIGHT! I can see why people really like this, and I might actually try making this for my family some night. Thanks for posting this!

      Swordfish is quite mild in flavour, its expensive here and you mostly pay for the firm texture. I like to cook it cajun style, with a blackened sear. I do that with tuna sometimes too, but at least tuna also has some flavour of its own.

      carpii I thought swordfish tasted a lot like salmon when I had it, just with a more delicate texture (less flaky, more juicy). And I can get it for about $6.99 a pound. I'm just not a huge fan of tuna

    In my experience all these nonstick frying pans, even very expensive, are not suitable for grilling. The best choice is cheap cast iron pan.

      False economy. Invest and buy good quality pans.
      They will last a very long time and will cook food better.

      +noreaction no it's not, the perfectly cooked meat (of any kind) would be something with your wanted core temperature in all the meat EXCEPT for the surface, which would have undergone a maillard reaction and become crispy and brown and awesome. Something like this is possible using a sous vide system, liquid nitrogen, and a deep frier. Enjoy well cooked meat ;)

    So many people complaining the fish is too raw... Have you never had a tuna steak? No where serves it fully cooked through... I would expect it a little more raw than this even.. hell, I'd bite into that giant raw piece :)
